July BMB May Signature Challenge
Tonight were here having pork ribeye with a jalapeño balsamic sauce, mashed potatoes, and green beans. And I'm treating myself to Peach Bellini flavored sparkling water, pretending it's something with vodka.
Tonight's dinner was brown rice pasta with red sauce & garlic bread. Dessert will be hazelnut chocolate chip gelato!

One can of drained corn, one can of rinsed black beans, one avocado, some Vidalia onion, several grape tomatoes, and I fake a "honey lime dressing" by whisking some honey and lime juice together with a little hot sauce. Salt/pepper/garlic to taste. You can add vegetables like cucumbers or other things like cilantro to taste. It's awesome because it only takes about 10 minutes to make, then you can let it sit in the fridge for a bit so the flavors can meld.

Today I made a batch of spring rolls stuffed with blackened chicken, pineapple, spinach, basil, cabbage, and carrot. I made a peanut satay sauce to dip them in.
