  • Tonight we had lemon and herb 'crusted' fish, roasted asparagus, and 5 grain rice. 
  • We did turkey burgers, sweet potato fries and broccoli.

    I served mine over rice. Easy and super delicious! Even AJ loved it (once I cut the cabbage up smaller)

    @kmurdock925 I thought the same! DH HATES new foods (frustrating because it means I've been stuck with same 10 meals for over a decade). He decided to try a new diet and was going to be skipping dinner in favor of a protein shake. It didn't last long, so he's stuck eating whatever I planned. He ended up really liking it, but also wanted the cabbage cut smaller so it "hides it"  :D

    try it one night. I decided even if he is eating I'm making at least one experiment meal a week.

    So, not a meal idea, but related to food...I recently signed up for Instacart. We're huge dine outers and if I do go to the store, it's usually without a meal plan/list. Instacart is more expensive than if I stuck to my list and did the shopping myself, but the convienence, forced planning, and having the food in the house already more than makes up for the minor increase. Just a heads up for you other busy mommas.

    I know Shipt does the same(I'll be switching to them next month) and Walmart doesn't deliver, but they have easy grocery pick up - you don't even have to leave your car.

  • We did a stir fry- tofu, zucchini, green bell pepper, mushrooms, noodles, a little soy sauce, a little plum sauce.  I prepped for tomorrow's dinner too.  Burritos- rice, corn, black beans, sautéed bell peppers, guac, salsa, sour cream and cheese for my husband.

  • How does everyone organize your meal plans? I have a binder full of my favorite recipes (mostly printed from Pinterest plus a few from magazines). I used to keep a small paper calendar in here where I would write down meals for the week. However I kept forgetting to pull meat from freezer or other things.  I'm a visual person so I'm thinking about getting a big calendar so I have room to write down everything on it. Example
    Wednesday-
    Prep- pull chicken from freezer for Friday. Make yogurt 
    Meals- Breakfast: overnight oats with fruit. Lunch: eggs with veggies Dinner: Mexican quinoa 

    I think there must be a better way but I don't know... I don't really want it organized on my phone because DH will want easy access to the meal planning. Any other ideas? 
  • This looks great @LDSJM123! Thank you! I think I'll print it out and put it in a cute frame on the side of my pantry. Then I can use a dry erase marker on it each week!
  • I'm hosting book club tonight and making chicken tacos.  Chicken breast, salsa and lime juice in the crockpot.  So easy, so yummy!
  • @LDSJM123 how long did you bake the poverty pasta? What temp? I have all the ingredients and had zero clue what to make. 
  • All the stuff is hot when you mix it together, so 350-400, just long enough to melt the cheese on the top. @babycakesday
  • I made Thai turkey meatballs and Asian peanut slaw tonight! 

    I use curry paste instead of red pepper paste because I think it tastes better that way.

  • I'm making a double batch of this for us and for a new mom on our group. I used green enchilada sauce since our HEB was out of the stew and slowcooked the chicken in the sauce all day. 

    Super easy to plus easy to put together for new mom meals. 
  • You guys. One Pan "jambalaya" was the bomb dot com. I needed to adjust the cooking times a bit (veggies took longer and I added the tomatoes in with them from the start) and my shrimp cooked faster because they were smaller. DELICIOUS. It also claims to feed 6. No way. 4 people.

  • Ok, probably dumb question but how do you do soups with toddlers?? Soup season is approaching (my favorite!!!) and I keep thinking it will be hard to do with P! He doesn't like when I spoon feed him but he hasn't mastered a spoon himself. With other runnier meals I've mixed his with a lot of rice so he can kind of pick it up in a glob and eat it, haha, but he really doesn't love rice that much so I always feel like he doesn't eat much those nights. Any soup tricks for this stage?

    I do the exact same! I drain off the chunks and put them on the tray, and the broth goes in a sippy. We haven't done tomato soup yet, but when we do, it'll go in a cup too. I like the cheap straw cups for soup, but M is still a bit too small for them. I used them with my oldest when she was 2-3. 
  • Aha! That's a great idea, never would have thought of that!!!!! Thanks ladies!! DH is sick so I'm thinking chicken soup tonight, I'll try this!

  • I just use a slotted spoon to get the "stuff" out. Works pretty well for us!
  • Any shrimp recipes y'all like? I love shrimp but dh isn't as big of fan so I'm trying to find New ways to see. Maybe a new recipe will change his mind. 
  • We love shrimp tacos/fajitas.

    Another amazing dish is taking enough shrimp to cover a sheet pan, 1 stick of butter per pound of shrimp (I should mention this is the most glorious bad for you delicious thing ever), juice of several lemons, zest of those lemons, fresh garlic, chili flakes, thyme, salt and pepper. 

    Mix the above ingredients except for shrimp into cold-ish butter, and crumble the mixture over the shrimp. This is best with shrimp you have to peel to eat. Bake it at 400* until the shrimp is pink. It's quick. 5-10 minutes. I serve it in bowls with crusty French bread for sopping up the sauce and GIANT salads. 

    This was a Paula Deen recipe I believe? I can't seem to find the original recipe. I make it once a year and don't bother measuring -- but don't skimp on the goods, the more sauce the better.  But you can't really mess it up :) 


  • @LDSJM123 - hub's fam does something similar for christmas eve dinner- we have chislik (basically steak that has been marinated and then deep fried- a South Dakota thing) and she takes the deep aluminim pans, fills them with shirimp, a stick or 2 of butter (can't have too much- right???), and old bay seasoning...so..so...good
