I also made "sloppy shredded chicken tacos". YUM! It's a nice change from traditional tacos. 1-1.5 lbs of boneless/skinless (I used thighs) Chicken, 8 oz can of tomato sauce, 8 oz green enchilada sauce, and 1/2-1 packet taco seasoning. Plop it all in the crockpot. Shred when Its done and top however you like your tacos.
These have also been hits! In the pizza sloppy joes, I just subbed in dry Italian seasoning. And for the pasta sauce, I put my meat and veggies in raw.

Made these last night. SO DELICIOUS! It also came together in under 30 minutes. One word of caution, if your Greek spice blend has salt, use less. Better yet, find a salt free one, because the flavor is amazing with that much.
It's finally cooler here and I'm loving it, got to break out my boots today! So I'm making chili tonight!! I think I make chili more than any other meal through the fall and winter, DH loves it and it's so cheap and easy. I get bored with it sometimes so I like to dress mine up by putting it over rice and putting taco toppings on it, kinda like Mexican gumbo at Qdoba (my fave!) I like mine with lots of beans and sweet corn, yummmm

@winnie1122 I made chili the other day too! It was delicious. I make it probably every other week during the colder months, and it's a crockpot recipe so it's even better.
It's the best! It tasted extra good last night since it was the first night the babe on the inside let me eat a real dinner without getting sick, and the babe on the outside loved it too so it was a win win! And I made way too much so we'll probably be eating it for a week.

We made chili last week too! We didn't add too many hot spices so both kids liked it. The second day we ate it on top of quinoa and added avocados on top. It made 4 meals!
Made a batch of these for breakfasts this week. They are really good! I didn't have sunflower seeds or dried cranberries so I swapped in flax, chia, hemp, and walnuts. I still used the same amounts. They turned out great! So the mixins are definitely flexible. M gobbled hers up.
Word of caution, my first batch burned. So I'd reccomend flipping them over at the halfway mark. That did the trick for me.
Made a super delicious pork loin last night. There were ZERO leftovers and it was super easy. I didn't measure and my explanation will be super simple/not recipe format.
Preheat oven to 375.
Put the pork in a casserole dish - drizzle olive or canola oil over it. Scoop brown sugar all over it (I think the recipe called for 4 tbsp- def just blobbed it all over). Drizzle minced garlic all over it (I think the recipe said 4 cloves? I used pre-jarred minced most of the time...literally just got a big spoon and put it all down the length of the loin). Salt and pepper it up. I threw on some gloves to avoid a hand wash and massaged it all in there (I also poked some holes in the pork so it seeped in there...I'm sure letting it marinade for a few hours would have been lovely).
Bake it for 45 ish mins, let it rest for 10 mins. Roast some potatoes and carrots in the oven at the same time.
10 minute prep max. Super yummy, super easy...winner.
Anyone ever had those ham and cheese sliders with the sweet sauce over top at parties? Well I made those for breakfast this week and added scrambled eggs with spinach wilted in. Delicious!
@kmurdock925 that sounds awesome! Did you roast the veggies on a separate oven sheet or in the casserole dish? Also, those instructions are the best to follow!
@kburg15 - I did it in a separate pan because of space with the one I used...you could totally do it in the same one and get some of the garlic-y sugary goodness on them.
I made this a few nights ago and down homemade bread. DH loved it and he isn't a big soup person. It's dairy free. We ate it for lunch for the next few days too.

Sorry I’ve been MIA for a bit...TB wouldn’t load for forever. I don’t have a good recipe. I was just going to google something. I try to use Serious Eats recipes whenever I can because I really like the head chef from that site. On a side note...I made chili this weekend. Simple 3 bean and beef chili. It has meat, beans, veggies, and isn’t really spicey so perfect for the babe and I and DH just adds red pepper flakes and hot sauce
Anybody have any favorite meatless dishes? We're trying to save money by using less meat-doesn't have to be vegetarian (chicken broth, etc).

@ldsjm123 has way more exciting breakfast ideas, but my family got stuck on one we really like. It’s grated sweet potato on the bottom, two packs of pork chorizo in the middle, and 12 eggs on top. I use salt and pepper and bake it in the oven. Elise loves it and eats way more than my husband and I do.
Yes, I do 1 breakfast for the bulk of the week. Not to plug my own blog... but there's a whole list of my favorites. That could get you through 2 months with no repeats
@schaze Grew up with a vegetarian mom so I have lots!! Stuffed pasta shells, veggie fajitas, potato soup (the one I posted here a couple days ago would be easy to omit the ham and still super delicious!!), fettuccine alfredo with a bunch of sautéed veggies, vegetable soup, bean chili, etc etc. My mom did use veggie meats in some recipes but most of her cooking was totally meatless and super delicious and filling. Beans, peas, mushrooms are good fillers and still give some protein (well maybe not mushrooms, but they are a good meaty like substitute) and we would always have filling sides like brown rice, potatoes, homemade bread or muffins, and noodles so I never felt like I was hungry 2 hours later like some all-veggie meals can leave you.

I want chili so badly but the hubs won't eat it and I hate making such a big batch of something to be the only person eating it. I'll probably do it anyway...but it seems wasteful (I always forget about the food I put in the freezer and it ends up getting freezer burnt and nasty)

After you make it, divide it into QUART size freezer bags. It's just enough for 1-2 lunches. Set a reminder on your phone/calendar for 2 weeks to pull a couple out. And then repeat when you pull those bags out. You won't forget, and you'll have some awesome lunches later this month and into December.
good call @ldsjm123 ! That would make it much more manageable. Funny story...back in my young- I don't even think married yet days...I attempted to freeze spaghetti sauce...and not thinking it through at all (and even though it was freezer burnt I was going for it anyway...) I put the entire freezer bag and all in the pot of boiling water...for an hour or so...the plastic melted so it was basically plastic sauce. Don't thaw it out that way, ha.
