@dvmmama I've started buying the caesar salad kits when they're on sale and making a salad the precursor to dinners. When the kits aren't on sale, I just buy a couple heads of lettuce and chop them up to use for a few days in a row. We like to add cucumbers, grapes, shredded cheese, pumpkin seeds, and cottage cheese to our salads. If you can do omelettes in the morning that's an easy way to get bell peppers, onions, and spinach into breakfast. Smoothies are another easy way to get veggies in! I love adding in spinach, carrots, kale, beets, cucumber to some berries, banana and orange juice. Crock pot recipes are low maintenance and usually include potatoes, carrots, onions, and celery with a roast for us. They make great leftovers for easy lunches too!
@dvmmomma I pack veggies for snacks at work so I have to eat them.. haha. My favorites right now are carrots or peppers with hummus and cucumbers with cheese!
I also make a *lot* of stir fries (or have the boy person make them). Last night's was shrimp, kale, onions, tomatoes, zucchini, mushrooms, and yellow squash.

@dvmmomma I’ve been throwing fresh spinach into every meal as it cooks / when it’s just done cooking. It wilts fast and shrinks so it doesn’t feel like it’s taking over the whole dish. Scrambled eggs have also been helpful for mixing cooked veggies into.
@jhysmath I love the Amy’s burritos for quick lunches at work! Often I’ll bring two of them, different kinds, if it’s a long day with a late afternoon meeting.
We are having dinner, burrito bowls, in about an hour but baby asked for a small plate of toaster oven nachos to tide her over in the meantime. I’m always hungry these but I get full / heartburn-y so fast if I eat three bigger meals a day like I used to.
It’s 4:30am and I just made a bowl of potato, cotija cheese, radish tops, egg, and chili oil. It’s so good I’m afraid I won’t be able to go back to sleep!

William likes tomatoes. Spaghetti and meatballs gets him rocking and rolling. I wonder if it’s because I’ve had a glass of low sodium V8 every day since January lol.

Ooops. I accidentally ate an entire bag of Muddy Buddies over lunch today. It was delicious. As of now, no regrets...time will tell with all that sugar, though.
