I’m gonna have to detox a bit after Hawai’i. I had a lot more sugar than I normally do. I’m gonna detox a bit off refined sugars all week. Just natural foods for me. Hopefully I’ll recover a bit from all my partying. Lol. But I did get some pineapple spears From Costco so that I don’t go through too bad of withdrawals. I think I’ve eaten 10 whole pineapples if you add it all up over the last week. Haha.
Making peanut butter coconut curry chicken in the crockpot for dinner tonight. Going to make onion bread and or bagels later. Probably bread, not sure I have the energy for bagels.

about 2ish pounds of boneless skinless chicken breasts or chicken thighs in the crockpot. 1/4 cup or so of brown sugar or honey, soy sauce (I have no measurements for this, I splash what I think is right), somewhere between a tsp and a TBSP of red curry paste depending on your spice/heat tolerance. Garlic powder, ginger powder - again until it looks right to you! Cook on high for 2 hours or low for 4. At this point add 1 can of coconut milk, and something like a 1/4 - 1/2C of peanut butter. Stir and cook on high for another 2 hours or low for about another 3. Serve over rice or noodles or veggies.
Definitely dragged DH on a for-no-good-reason date night to a fancy steakhouse because I was craving lobster bisque and steak... and then had $5 shaved ice for dinner. And it was amazing.
It was even funnier because apparently it’s a big anniversary weekend and almost every other table had little “happy anniversary” signs on it and we were just there because of pregnancy cravings...
I swear I've had ten grilled cheeses in the past week. They've been easy to pack for lunch, then I get home and DH asks what we want to do for dinner and I just end up shrugging and saying grilled cheese.

Just had a omelet with pepperoni and cheese for lunch (and breakfast this morning) and some celery with peanut butter. Big ol' bottle of Powerade Zero next to me that I am forcing myself to finish before I make an afternoon cup of chocolate cherry coffee.
TIL a whole bottle of sparkling cider only has 420 calories. Ooops, but again, could be much worse.
Also made Cacio E Pepe, which sounds simple (3-4 ingredients) but all the recipes and articles about it said it was deceptively complicated. I agree, but it was good, especially with chicken DH made. Will tweak slightly for next time, but yum.
I need to learn how to make coconut rice... I made shredded BBQ crockpot chicken burritos last night - I had my Reb3l Groove dance class, and this way DH and the boys could eat without waiting for me. My boys NORMALLY put away 3-4 tacos/burritos each. Apparently they each made 1 big fat one last night and were stuffed total win! Now Korean ground beef bowls or cheeseburger salad for dinner tonight.
@samanthak46@hakele I have also been going through cheese and bread (especially cheese) way too quickly. It's the perfect snack or small meal these days. Sometimes I'm just eating cheese with fruit or crackers.
I’ve been really into making smoothies lately with nicer weather and all it’s so refreshing. Today for a post work out smoothie I did mango, pineapple, coconut water, vanilla protein and chia seeds.
My roof deck garden is absolutely flourishing! I've really enjoyed going up in the morning, snipping some greens, and sauteeing them with eggs for breakfast. Last night we went for a long walk (the weather has been amazing lately!) and then made patty melts. Yummmm.
Got this idea to mix mango juice with cherry juice last night. Absolutely delicious, but I paid for it in reflux later Side note, did you know they make Oreos with dark chocolate filling?!

In a medium pot, combine the rice, a big pinch of salt, and 1 1/4 cups of the coconut milk. Heat to boiling on high. Once boiling, reduce the heat to low. Cover and cook, without stirring, 21 to 23 minutes, or until the liquid has been absorbed and the rice is tender. Turn off the heat and fluff with a fork.
@frenchbaby18 I remember going through really wanting American breakfast when I lived in Italy. Thankfully we had this expat store in town that had maple syrup (and good peanut butter!). I don’t think I’ve ever spent so much on maple syrup. I think it was about €25 for about 8oz of syrup. At the time the exchange rate was nuts so it was like spending $40!
