I start mine whenever I only have one meal left. Let’s be honest, sometimes the plan lasts longer than a week due to having Pizza/cereal for dinner.

I make mine Sat or Sun, usually for two weeks at a time. This week- Sun- Free day, going to a friend's house Mon- omelettes, salad w/ chicken, stuffed peppers Tues- ham&egg cups, burrito bowls, shrimp w/veggies Weds- quiche, tuna, chili Thurs- hash, salad w/chicken, salmon Fri- eggs w/sausage, leftovers, baked chicken legs Sat- Free, salad w/chicken, chicken & broccoli
I typically make mine on Fridays and go to the store on Saturdays. My husband is on a strict low fat no oil vegan diet for health reasons so here's what I've got planned:
Sweet Potato/Avocado (either or), Cucumber, and Spinach Sushi w/ brown rice.
Eggplant parmigiana and broccoli
Veggie Burgers with whole grain bun
Black eyed pea and collard green soup w/ cornbread
Baked Falafel with couscous & hummus
Hashbrowns with spinach, onion, mushrooms, and peppers
-Balsamic Beef Roast and Root Vegetables (crock pot meal) -Rosemary-Garlic Chicken with Bacon Wrapped Cabbage -Penne Pasta with Sausage and salads -Egg Rolls in a Bowl -homemade Pizzas and salad -Leftovers
Will do sandwhiches, leftovers, and salads for lunches.
Cereal, oatmeal, eggs, avocado toast, etc for breakfasts
I need this! I just did two hours of cleaning to avoid making my grocery list.
Breakfast: sausage/sweet potato/veggie hash, hard boiled eggs, yogurt/granola
Lunch is always leftovers
Sunday: baked chicken primavera w/side salad Monday: Tuesday: pork chops and asparagus Wednesday: pizza (we only have 20 mins after work before class) Thursday: pasta Friday: Saturday: out likely

I go back and forth with having meal plans and just winging it.
-Burgers/veggie burgers and chips -Leftover black eyed pea soup/bread -Quesadillas and beans -Spaghetti and meatballs, salad -Something with chicken breast -Something with sausage, kale, and beans -Leftovers
@austenista I made black eyed pea soup with kale last night- it was my first time using our instant pot and I loved the results. I didn't have ham or bacon on hand so it was vegetarian but my meatatarian DH still had multiple helpings lol.
@May14th2011 I used to love making quiche for dinner (DH grimaced when I called it quiche so I threw bacon in half of it and called it meat cheese egg casserole lol) but DS had an egg allergy so I stopped but he recently outgrew the allergy so I want to start again. I'd always rather bake than cook so quiche makes me happy.
@llamamama14 What a coincidence! I'm actually using kale this time too because I couldn't find any collard greens. I use this recipe but I leave out the bacon, switch to vegetable broth, and add some ACV for my taste.
I typically make my menu up Friday and Saturday, So that I can shop and prep on Sunday.
Monday: asparagus stuffed chicken (side salad for me, mac n cheese for the kids) Tuesday: crustless pizza casserole w/ peppers & mushrooms (salad for me, garlic bread for family) Wednesday: baked meatballs over zucchini Thursday: French toast, sausage & fruit Friday: taco salad Saturday: left overs
Idk if we want a separate instant pot recipe thread but I will just include a couple of my hits in here. If anyone has had success with a mac & cheese recipe HMU.
I refuse to do any IP recipe where I have to prepare something else in another pot or on the stove. IMO the beauty of the IP is that you don't have a ton of dishes and you can do a meal in 30 mins.
