Now that our LOs are around 6 months old and we've realized how quickly time flies... anyone else thinking about their first birthday? I'm not "planning" it per day, but I am starting to come up with ideas!
So what are you doing?
Just familg? Friends too?
Any theme?
Also, any good recipes for a healthy smash cake? I haven't given my LO any sugar (besides natural such as fruit) and don't really want too.
Re: First Birthday!
Since LO loves guac so much I think we might do smash tacos instead because: Tacos
@kgridley27 If it weren't for tradition, I would steal your idea because yes, TACOS!
So as far as a first birthday party goes, I haven't even begun to think of a theme. I do already have a guest list, though, because it's the same guest list that's invited to every family party. It will be about 50 people, all family. I know, it sounds like a lot. No, my house will not be big enough. Hope we have good weather come the end of October this year.
For family parties I usually end up doing a "build your own" bar of some sort of food, and I have done a "build your own burrito bowl bar" before. If I end up sticking with a taco smash I could probably go with that theme.
@fitlady21 Here is the recipe I will use for LO's cake
Sugar-free Carrot and Date Cake
makes 8″ cake or 12 cupcakes
1 2/3c flour
3 tsp baking powder
1 tsp ground nutmeg
1 tsp ground cinnamon
2/3 cup dates pitted and finely chopped
1/3c shredded unsweetened coconut
1/2cup butter, melted
1/2 cup raisins- soaked in hot water then drained
1 cup grated carrot (about 1 large carrot)
2 tbsp milk
2 eggs, lightly beaten
Frosting
1 cup cream sweetened with 1 tablespoon maple syrup and sprinkles to decorate (optional)
Method
Preheat oven to 300°F. Lightly grease an 8″ round cake tin** and line the bottom with baking parchment paper.
Sift the flour, baking powder and ground spices together. Give it a good stir to make sure it’s evenly combined. Stir through the dates and coconut.
Combine the melted butter, raisins, carrot and milk then add to the dry ingredients and mix gently until evenly combined. You should have a very thick mixture. Add the eggs and stir.
Spoon into the prepared tin and bake in the oven for 45 – 60 minutes (about 30 mins for cupcakes) until done when tested with a skewer.
Remove from the oven and allow to cool for 5 minutes, then turn onto a wire rack, removing the paper, to cool completely. Store wrapped in foil until ready to use. Decorate just before serving.

@Ladybug2821 ugh yes it does get expensive! I easily spent at least $800 not including presents... just don't tell my husband haha. Next year I plan on only inviting close family and just doing hamburgers and cake.
@fitlady21 Girl!!! $800?? I'm not even close to that lol. I'm just super cheap and really didn't plan for a real party like it's turning out to be.
