Friday: I'm going out to dinner with friends to celebrate my belated birthday, so DH and the boys are on their own!
I'm not doing freezer meals because quite honestly, I barely have the energy to do our normal meals. Once baby is here, I'll probably just continue cooking our meals nightly, do quick things in the oven, or have DH run out for something to eat.

I wanfed to do a few freezer meals, but we don't have a deep freeze and our freezer just doesn't hold much. So I've decided if our church doesn't do a meal train or anything we will order Hyvee grocery delivery and takeout and not stress about it.

thursday: pork tenderloin probably
friday: maybe a rotisserie chicken from the grocery store
Yesterday I added 2 lbs of cooked taco turkey to our freezer stash. We have a meatloaf, a lasagna, and a tray of baked ziti in there, so I think we have 10-12 meals for me and DH stored away. I just hope baby doesn't have a dairy problem... We bought a chest freezer in November partly for that purpose (also because we were hosting Thanksgiving).

Other substitute options I have in mind are spaghetti casserole, biscuits and gravy or pancakes.
Edited to add: I have made several things for the freezer - batch of soup, a few casseroles, buffalo chicken tacquitos, a couple different kinds of muffins, banana bread, and lactation cookie dough.

I think we are done prepping freezer meals at this point. And by we, I mean DH lol (he's the cook). We currently have 2 trays of lasagna, 1 tray of ziti, a ton of bolognese sauce (so just need to boil pasta to go with), pork carnitas, beef chili, and black bean burgers. So at least a month worth of dinners for 2 people. I know people will also be bringing us food, so I think we should be set for a while. LMK if anyone wants recipes!

As far as freezer meals, I won't be doing anything. I have a freezer full of Tostino pizzas, burritos and corn dogs!
Tues: BBQ chicken with black eyed peas salad
Wed: eggplant parm soup, which is basically tomato soup with cheese and diced fried eggplant on top. Making a double batch of the soup and freezing half.
Thur: French onion pork chops with stove top
Fri: burgers and garlic fries
Sat: my mom is coming and she always orders us Chinese because there are no Chinese restaurants where she lives

I like to either use red skin or Yukon gold potatoes, leave the skins on, cut into quarters and boil until tender. Mash with melted butter, whipping cream (you can use milk or whatever you prefer), salt, pepper, a pinch of nutmeg, a couple of cloves of roasted garlic, and freshly grated parmigiano reggiano. The cheese is expensive, but so worth it, and a little goes a long way so it lasts forever!
