Meal Plan Monday 3/20

We haven't done one of these in awhile. So what's on your plates this week? Are you doing freezer meals to make life easier when baby arrives? Share your recipes!!!!

    Today and tmrw we have baseball, so we are just going to eat leftovers, quick things we can pop in the oven, or cereal.
    Wednesday: spaghetti
    Thursday: French dip sandwiches (from the crockpot)

    Friday: I'm going out to dinner with friends to celebrate my belated birthday, so DH and the boys are on their own!

    I'm not doing freezer meals because quite honestly, I barely have the energy to do our normal meals. Once baby is here, I'll probably just continue cooking our meals nightly, do quick things in the oven, or have DH run out for something to eat.

  • Today--chicken cordon bleu
    Tomorrow--probably tacos
    Wednesday--going to see Beauty and the Beast and eat out after
    Thursday--leftovers
    Friday--don't know yet. 

    I wanfed to do a few freezer meals, but we don't have a deep freeze and our freezer just doesn't hold much.  So I've decided if our church doesn't do a meal train or anything we will order Hyvee grocery delivery and takeout and not stress about it.

    today: frozen pizza
    tomorrow: spaghetti and meatballs
    wednesday: tbd?
    thursday: pork tenderloin probably
    friday: maybe a rotisserie chicken from the grocery store

    Yesterday I added 2 lbs of cooked taco turkey to our freezer stash. We have a meatloaf, a lasagna, and a tray of baked ziti in there, so I think we have 10-12 meals for me and DH stored away. I just hope baby doesn't have a dairy problem... We bought a chest freezer in November partly for that purpose (also because we were hosting Thanksgiving).

  • @wagnerw haha! They're pricier than Walmart but I love them. Especially the ones with a caribou coffee kiosk or shop attached.

    Monday: Layered Taco bake

    Tuesday: Dinner at my mom's

    Wednesday: Hawaiian Ham sandwiches

    Thursday: Cheeseburger Soup

    Friday: Leftovers probably

    Other substitute options I have in mind are spaghetti casserole, biscuits and gravy or pancakes.

    Edited to add: I have made several things for the freezer - batch of soup, a few casseroles, buffalo chicken tacquitos, a couple different kinds of muffins, banana bread, and lactation cookie dough.

    We have been starting the freezer meals. My mom is going to make a bunch for us, plus I made chicken stew over the weekend and froze a few meal portions.
    Monday: Leftovers
    Tuesday: Chilli
    Wednesday: Quinoa quiche
    Thursday: Instant Pot mushroom risotto
    Friday: take out  

    ETA: I'm planning on making lactation cookies today. I'm excited!

    @Koukonei that ham and potatoes sounds so delicious!! Is it easy?
  • @Taylor72 It definitely is! I just make it up as I go along. I can post my recipes later, my phone is dying :D
  • Mon: five spice chicken
    Tues: BBQ chicken with black eyed peas salad
    Wed: eggplant parm soup, which is basically tomato soup with cheese and diced fried eggplant on top. Making a double batch of the soup and freezing half.
    Thur: French onion pork chops with stove top
    Fri: burgers and garlic fries
    Sat: my mom is coming and she always orders us Chinese because there are no Chinese restaurants where she lives

    I also found this freezer meal I'm going to add to my collection on my day off along with like 3 or 4 pans of cinnamon rolls

  • @wagnerw and @KirstinH88  I've been in the same boat....about as often as everyone else seems to do take out is about how often I COOK.  We eat a lot of cereal! haha.  I just rarely had the energy to breathe after coming home from work between 5:30 - 7:00 then spending a couple more hours on stuff for work (teacher life) let alone cook.  DH doesn't know how to cook, even when reading a box, somehow it gets messed up. He can grill though, which he is supposed* to do tonight!
