Today and tmrw we have baseball, so we are just going to eat leftovers, quick things we can pop in the oven, or cereal. I'm not doing freezer meals because quite honestly, I barely have the energy to do our normal meals. Once baby is here, I'll probably just continue cooking our meals nightly, do quick things in the oven, or have DH run out for something to eat.
I need to make more freezer meals! Right now I have about 30 bean, rice, shredded chicken burritos in the freezer. My church group does meals for the first few weeks, and my family will be here so I don't have that much of an urgency to get the freezer meals completed.
Monday- pesto chicken and ravioli Tuesday- lettuce chicken wraps Wednesday- Indian butter chicken curry Thursday-ham fried rice Friday- chicken spaghetti and green bean casserole
Today--chicken cordon bleu Tomorrow--probably tacos Wednesday--going to see Beauty and the Beast and eat out after Thursday--leftovers Friday--don't know yet.
I wanfed to do a few freezer meals, but we don't have a deep freeze and our freezer just doesn't hold much. So I've decided if our church doesn't do a meal train or anything we will order Hyvee grocery delivery and takeout and not stress about it.

Yesterday I added 2 lbs of cooked taco turkey to our freezer stash. We have a meatloaf, a lasagna, and a tray of baked ziti in there, so I think we have 10-12 meals for me and DH stored away. I just hope baby doesn't have a dairy problem... We bought a chest freezer in November partly for that purpose (also because we were hosting Thanksgiving).

Other substitute options I have in mind are spaghetti casserole, biscuits and gravy or pancakes.
Edited to add: I have made several things for the freezer - batch of soup, a few casseroles, buffalo chicken tacquitos, a couple different kinds of muffins, banana bread, and lactation cookie dough.

This has basically been my life for the last 9 months. My poor family rarely gets a decent home cooked meal... Sorry!
DH made a huge pot of barbacoa on Sunday so we will be using that in different dishes throughout the week...Sunday we had it with rice, last night quesadillas, tonight tacos, etc.
I think we are done prepping freezer meals at this point. And by we, I mean DH lol (he's the cook). We currently have 2 trays of lasagna, 1 tray of ziti, a ton of bolognese sauce (so just need to boil pasta to go with), pork carnitas, beef chili, and black bean burgers. So at least a month worth of dinners for 2 people. I know people will also be bringing us food, so I think we should be set for a while. LMK if anyone wants recipes!
I'm still meal planning but trying to stick to simpler stuff that requires less prep. I think I have rotisserie chicken on the menu tonight with a salad, chicken burrito bowls tomorrow, crockpot turkey chili Thursday and we'll see Friday. I've done about all I can do in the way of freezer meals now - we have an apartment-sized fridge with a woefully small freezer that is already packed to the gills.

As far as freezer meals, I won't be doing anything. I have a freezer full of Tostino pizzas, burritos and corn dogs!
Mon: five spice chicken Tues: BBQ chicken with black eyed peas salad Wed: eggplant parm soup, which is basically tomato soup with cheese and diced fried eggplant on top. Making a double batch of the soup and freezing half. Thur: French onion pork chops with stove top Fri: burgers and garlic fries Sat: my mom is coming and she always orders us Chinese because there are no Chinese restaurants where she lives
@Taylor72 So for the ham, I mix real maple syrup (the darker the better) and dijon mustard together and rub a thick layer all over the ham, then I put it in my Dutch oven dump about 1 inch of beer in the bottom, cover and heat at 350 degrees until hot.
I like to either use red skin or Yukon gold potatoes, leave the skins on, cut into quarters and boil until tender. Mash with melted butter, whipping cream (you can use milk or whatever you prefer), salt, pepper, a pinch of nutmeg, a couple of cloves of roasted garlic, and freshly grated parmigiano reggiano. The cheese is expensive, but so worth it, and a little goes a long way so it lasts forever!
@wagnerw and @KirstinH88 I've been in the same boat....about as often as everyone else seems to do take out is about how often I COOK. We eat a lot of cereal! haha. I just rarely had the energy to breathe after coming home from work between 5:30 - 7:00 then spending a couple more hours on stuff for work (teacher life) let alone cook. DH doesn't know how to cook, even when reading a box, somehow it gets messed up. He can grill though, which he is supposed* to do tonight!
