Love this thread! I used to meal plan every week but stopped during 1st Tri because I had zero motivation to do anything. I've been pickings it back up again lately though.
Sun: Beer Cheese Soup Mon: Oven baked chicken with roasted butternut squash and asparagus (1 pan dinner! Love these!) Tues: Taco Salad Wed: teriyaki pork chops with pineapple, brown rice, and roasted carrots and zucchini Thursday: Ham, stuffing, salad Friday: Ham and Bean soup using all the leftover ham from Thursday

H left this morning for an out of state shoot so I'll make kitchen sink soup for me tonight & tomorrow (you know, with whatever you've got, everything but the kitchen sink? Mine will have potatoes, kale, white beans, rainbow carrots, etc etc) For the rest of the week he'll make tempeh tacos and I'll make potato leek soup (with silken tofu so there's actually protein in it) but which days are which depends on his schedule that I can't remember right now.... We usually only cook 3 days a week and do leftovers 2-3 days and take out 1-2 days
I made a pork tenderloin this week and we've had it for 3 meals now plus a little left overs. Put it in the crockpot for 8-10 hours with chicken stock, honey, onion and chili powder. One night we had it shredded with roasted broccoli & couscous, one night rewarmed in the oven w/BBQ sauce on buns with roasted cabbage and carrots, and tonight as tacos with random fruit on the side. The weekend we'll have spaghetti with lentils (just jarred sauce with some type of dairy mixed in--ricotta or cream cheese or half&half) and last resort food before we shop is using all our random veggies in quesadillas.
DD1 (2008) DD2 (2010), #3 (DH's first bio kid) on the way in January 2017! Almost always mobile bumping--forgive my typos.
