No idea what's for dinner, but I made this dairy-free creamy mushroom soup today for lunch. It's pretty tasty! It does use almond milk, though, so not nut free.
I'm going to buy some cucumbers and tomatoes on my way home to make Greek salad. But no lettuce. Just sliced cukes, feta, olives, tomatoes and Gazebo Greek salad dressing. Mmmmm.

2 cups cauliflower florets 1⅔ cup unsweetened original almond milk 1 teaspoon onion powder ¼ teaspoon Himalayan rock salt Freshly ground pepper, to taste ½ teaspoon extra-virgin olive oil 1½ cups diced white mushrooms (I used baby Bella) ½ yellow onion, diced
Place cauliflower, milk, onion powder, salt and pepper in a small saucepan. Cover and bring to a boil over medium heat. Reduce heat to low and simmer for 7-8 minutes, until cauliflower is softened. Then, puree using a food processor, immersion blender or blender. Meanwhile, add oil, mushrooms and onion to a medium-sized saucepan. Heat over high heat until onions are translucent and beginning to brown, about 8 minutes. Add pureed cauliflower mixture to sautéed mushrooms. Bring to a boil, cover and simmer for 10 minutes, until thickened

I wasn't thinking and had Denny's pumpkin pancakes with bacon a couple weeks ago and thought I was being compliant by not getting butter on the pancakes. MH said L was in fits that evening when I was napping. I thought it was the pancakes only but guess not! Oops.
ETA yes, I'm just now learning to cook in my late 30's so I didn't realize plain pancakes have dairy.
Last night my 4 year old decided he wanted to make dinner after we watched Master Chef Junior. He made us hamburgers on the stove and green beans. He actually did a great job for doing it all himself. He kept telling me to go away and let him cook. Tonight I am putting fish fry on catfish and baking it. Broccoli. Skillet potatoes with bell pepper, garlic, and onions.

@Smallllmin, I have a freezer half filled with Trader Joe's goodness that I can no longer eat due to MSPI Anyway, tonight's dinner will be mini pizzas made with TJ whole wheat pitas as the crust. Pepperoni for MH and Mediterranean (hummus & vegan cheese instead of pizza sauce & normal cheese) for me. I sauteed TJ crimini mushrooms, frozen tri-color bell pepper medley and onions as the veggies on the pizzas.
@redrockmama, how old is M? That's great dairy is being tolerated again. Trader Joe's spinach & cheese tortellini is sitting lonely in our freezer.
Sorry I missed this, he is almost 6 months old. He never had terrible reactions; just green poo,reflux and screaming, so much screaming. He's a happy camper now

No problem and thanks for answering. L had similar symptoms so that gives me hope I may be able to reintroduce at 6 months instead of a year!

DS had sweet potato & apple puff things, 1/4 banana, yogurt bites, guac and plum organic pouch carrot, turkey, corn (his fav).
