Hey, think I could double @mapleme's famous pumpkin pie, and put it in a 9 inch pie plate with no crust? The swingle recipe was very thin in a 9 inch plate.
Pie crusts hate me, but I'm tempted to try the top crusts that you cookie cut and arrange on top. They are so cute! For the bottom crusts, I always make the dough and then smash it in the pie pan. "> Otherwise it gets stuck on the counter and I get irrationally mad!
You just have to pick it up and rotate it a little bit every pass or two with the rolling pin. And dust the counter with flour as needed. My crusts used to stick to the counter every time, too, but it was because I never moved the dough. You can also cheat and roll it out between two pieces of Saran wrap.
I roll between 2 pieces of wax paper. Then peel off the top, flip it over into the pie plate, and peel off the other piece of wax paper.

I use a pastry cloth and pastry sock that goes over the rolling pin. You dust the cloth with flour & it doesn't stick.
I can't wait to make pie next week. Pumpkin, banana creme, coconut creme, lemon meringue. We are having pie night the Saturday after thanksgiving so we can just eat ALL.THE.PIE. One year my mom made 10 pies to serve 5 people...that was a good year. :-)

I'm with SAK on the crust thing... Cookie crusts are great, but pie crust is a negative. But now y'all are making me feel like I should make pie... What kind should it be...?
