  • My mom makes an impossible pumpkin pie (impossible because it does the impossible and makes it's own pie crust according to the recipe). It's one of the few pumpkin pies my family will eat since we hate pie crust with pumpkin pie but love it with other pies.

  • I make my pie crust in the food processor and it's ridiculously easy.  You put the flour and fat in the food pro and pulse it until it's somewhat combined.  Then you drizzle in your ice cold water until it gathers together and starts spinning around the bowl as a ball.  It helps to remember that it's the fat melting which makes the flakes, so you want to leave visible specks of butter/shortening/lard like the size of peas.  Also, make sure you pick up your crust and rotate it on the counter frequently as you're rolling it out.  Then it doesn't stick.  It's really not hard at all.
    I might have to try this because we finally bought a food processor. It's tiny though, will it still work for a single pie crust?

  • I regret not bringing a pie plate or two from home. The pie plates they have here are just not quite right for fruit pies.

    How tiny?  I have an 11 cup food pro and it makes a double crust comfortably, but I don't think it would do any more than that well.  I have a tiny hand held one that holds maybe 2-3 cups and I don't think it would even do a single crust.
  • Blast, it looks like it's a 3.5 cupper. Oh well I'll have to stick with my pastry cutter and fingers and remember to take my ring off this time.

  • I hate most pies. If they are made well, they can be great, but most people pull them out of the freezer/can/or store bought. Otherwise they burn them, handle the crust dough too much, or leave the center goopy. I much prefer cake. While they can easily be screwed up, even the mess up ones can taste good as long as they aren't dried out. In which case, add some ice cream.

    Around here fresh fruit IS dessert. When we feel like baking fruit it's usually in the form of cobbler - peach or apple cobbler with ice cream trumps pie a la mode most days and I can't tell you why cause I don't know.

  • Noted. I'm just lazy. So I just get frozen pie crusts.
    I'm just saying screw it and going crustless. My presence should be enough, but no. So they get crustless pie.
    Pie without crust is like cake without frosting. Blasphemy!!

    However, a muffin is a bald cupcake. It gets a pass.

    Hey, think I could double @mapleme's famous pumpkin pie, and put it in a 9 inch pie plate with no crust? The single recipe was very thin in a 9 inch plate.

  • I thought the same thing TJ. Or you can use extra for french toast or pancakes or waffles, or muffins. So delicious! I have extra puree in my fridge I am thinking I will make something for breakfast, we don't have any bread though so probably pancakes.

    You just have to pick it up and rotate it a little bit every pass or two with the rolling pin.  And dust the counter with flour as needed.  My crusts used to stick to the counter every time, too, but it was because I never moved the dough.   You can also cheat and roll it out between two pieces of Saran wrap.
