What do you make when the budget gets tight?

  • I try and do at least 1 or 2 dinners a week that are meat free to save money. This is a favorite:

    I also generally commit to going a week or two with only buying produce and milk and cooking the freezer and pantry before a vacation and Christmas. It saves money and then nothing goes bad or gets wasted collecting dust.

  • Speaking of lasagna I used (in the carb days) to make a really awesome "Irish lasagna" as a no meat dinner. It was like twice baked potatoes kind of. I would bake potatoes and then slice them in thin circles, layer with chopped spinach, onion and shredded cheese, repeat layers and then mix up a quiche like base of eggs, milk, melted butter and crushed garlic. I would pour that over the layers and bake until brown and bubbly. It was like a twice baked potato quiche. It is sooooo yummy!
    Crust less quiche or frittatas are also a quick easy dinner that is low budget and you can put anything in them.

  • @stargazer763‌ I made something like that last week! So good. But I'd didn't use veg oil at all. And I added Gorgonzola crumbles :)

    Two things to add to this recipe:

    1) Brown the sausage first.
    2) Make sure to use medium or small zucchinis. We used medium zucchinis the first time, and they were great, but we used large zucchinis the second time and they didn't get as soft as they should have.
  • My favourite thing to make is pasta with garlic shrimp and zucchini.

    My go to when money is tight is...that actually because I usually buy the bags of frozen shrimp and keep them in the freezer for 'just in case'. And tuna melts! Or like PPs said, tacos, or something that has lots of leftovers like chili or lasagne.
