I am so jealous reading about the potatoes and pasta. DH is livin la vida no carb and it sucks. I'm sure it's why we've both been doing well weight wise (and blood sugar and cholesterol for him, which were high and why we made the change) but it gets more expensive to be high protein. This is why I had to keep quiet about the dino nuggets in the curry last night No carbs here honey!
I made a ravioli lasagna (that's the best way to describe it) and the kids loved it, just take a bag of frozen ravioli and layer it with red sauce and cheese and bake at 400 for 30 minutes covered, 10 minutes uncovered. Seriously, it was the first time in like ever we haven't had to fight Bradley over dinner!
When we are going low budg everyone gets their favorite, B gets bagels w/cream cheese and fruit, Ty gets cheese quesadilla with whatever veggies I can find and avocado, and H and I usually have tuna or pbjs
Speaking of lasagna I used (in the carb days) to make a really awesome "Irish lasagna" as a no meat dinner. It was like twice baked potatoes kind of. I would bake potatoes and then slice them in thin circles, layer with chopped spinach, onion and shredded cheese, repeat layers and then mix up a quiche like base of eggs, milk, melted butter and crushed garlic. I would pour that over the layers and bake until brown and bubbly. It was like a twice baked potato quiche. It is sooooo yummy! Crust less quiche or frittatas are also a quick easy dinner that is low budget and you can put anything in them.
@stargazer763 I made something like that last week! So good. But I'd didn't use veg oil at all. And I added Gorgonzola crumbles The Irish in me needs cheese!
1) Brown the sausage first. 2) Make sure to use medium or small zucchinis. We used medium zucchinis the first time, and they were great, but we used large zucchinis the second time and they didn't get as soft as they should have.
My favourite thing to make is pasta with garlic shrimp and zucchini.
My go to when money is tight is...that actually because I usually buy the bags of frozen shrimp and keep them in the freezer for 'just in case'. And tuna melts! Or like PPs said, tacos, or something that has lots of leftovers like chili or lasagne.
