  • I need to throw some chicken breasts in the crockpot so I can have shredded chicken for our dinner tonight. I usually cook them in chicken broth so they aren't dry and disgusting, but we are out. Anyone have any suggestions on a substitute? Can I just use water?

  • Just sitting here at work watching the Avengers, with a cup of coffee and enjoying the peace and quiet, before I have to go home and entertain my In-laws for the weekend. Plus side, DH and FIL are starting our new hardwood floors!

    Do you have a jar of salsa or a can of rotel? either of those work great when I make shredded chicken for taco type dishes.

  • @pnwlover12As some have mentioned, yes, water will be perfectly fine. 


    Also, you don't need to cook them in the crock pot either. I make enchiladas all the time. As an alternative to the crock pot, try this:

    1) Boil chicken for 10 minutes in water. I add vegetable scraps, even onion skins, to the water in addition to some seasoning. 

    Remove the chicken and run the broth through a strainer. You now have chicken stock! Save your stock for the next time you run out so you will have some and do not have to buy it! (It will keep for 2 weeks in the fridge or 3 months in the freezer. I like to freeze it in cupcake tins and store in a bag. 3 tins is 1 cup.)

    Check out this post on my blog for how to make vegetable and chicken stock.

    2) Put the chicken in a standing mixer and turn on. Shredding is done. Not sure if you know this trick, but it is a fucking life saver.

    We always do this. Spend a shit ton of money at the grocery store then go get lunch or dinner instead of cooking some of the food we just bought.

    Yeah, the frequency is a bit much.  My DH and I are generally the opposite and I tend to be going away for girls trips and leaving him home with DD while he never ever goes away with friends, but even then, it's every two months or so, if that.  Mention it to him when he gets back and tell him you need a break, especially now that you're 7 months along.

  • DH is basically at the golf course every Sat & Sun from 7am - 3/4pm, and I don't really mind. If he was spending evenings out I think I would get a bit more upset.

    I feel sort of guilty for not calling my MFM to inquire about the results of my 3 hour GTT.  But, considering how they acted when I failed my 1 hour, I'm not terribly concerned.

  • Ok, sorry in advance, but I really need to bitch and moan for a minute.

    I hate how my brain works sometimes. I am the worst person I know at math - it has been such a major roadblock in my life. I've gotten tutors, worked with friends, asked instructors, etc. and no matter how much they help me - I just don't understand it. Math is what stopped me from wanting to go to med school for christ's sake - any math based science (such as chemistry, etc.) just doesn't compute. Human Anatomy? I can memorize every bone and functioning system in the body in a day. No fuckin' problem.

    My bitch isn't really about med school, that was just an offshoot tangent. I'm just pissed that I need to pass my current math class, and I don't know if that is going to be a possibility. I get an A on all my homework, C's on my tests, so it should somewhat average out....if it weren't for this fucking bunny project. Turns out, this is our final - so if I don't get at least 70% on this, I will fail the class. My instructor is an asshole, very non-communicative and acts like we should be teaching ourselves the material.

    Okay, sorry for sounding so whiny. I just needed to vent and DH is still at work.

    In other news, you can't pay me to go into babies r us or target. I'm so tired of walking around and shopping. I'm sitting in my driveway mustering up the energy to not only get out of the car, but to unload my car smh

    Yeah @TicketTuesday‌ I did horrible in college math as @LightBright515‌ said it is mostly self taught - hence doing horribly. :( I feel for you!!

    And I went to target twice this week and didn't unload my car either time except the stuff I wanted as needed. Pathetic. I am going to ask DH to do it when he gets home... FFFC?

  • At my doctor's appointment, I asked about getting my tubes tied. My doctor basically tried to talk me out of it and said we'll talk about it more after baby is here (apparently they dont do it in hospital right when baby is born anymore. Which is fine.) She also suggested I wait 15 years and if I still feel the same, then there'd be no problem. Uhm... no thanks? Im fairly confident in my decision and know now that I dont want more children. Two is more than enough.

    What about your SO getting a vasectomy? I only ask because my mom got her tubes tied after delivering my sister and said had she known how difficult the recovery would be, she would've made my dad get fixed!
  • Yep, my Dh is getting a vasectomy done sometime within a year, if they will do it. He will only be 27, but we know we're done with two. It was his idea, lol. I think he is afraid of getting me pregnant again, even if I were taking BC.
