    It's chocolate science. Tempering is basically aligning the crystals in the chocolate to create a shiny finish, with a hard texture. Most candy has oils in it, so it stays soft, and pretty, but not shiny. Straight chocolate, if not tempered, ends up blooming, which is the term for chocolate that is dull with white spots or streaks in it. It's called tempering, because you bring the chocolate up to a certain temperature, then slowly bring it back down, while seeding it with already tempered chocolate, and then once it gets to the correct temp, bringing the temp back up slightly. It's a bit complicated, but it's prettier and makes the chocolate melt better and feel better on the tongue.

    ETA: Untempered chocolate is also softish, with a kind of weird texture.

    It wasn't his first snow experience, just first sledding. So to speak. Apparently first shoveling at my parents' house too.
    Shoveling isn't exactly a fun, leisurely activity in the snow.
