Hi Ladies,

I am having a surprise party for my grandmother with a cinco de mayo theme on 5/4. I need food suggestions. I was thinking of doing a taco/fajitia bar but need more than that.

I wish I could help - My favourite Mexican food is the homemade soup from this little Mexican place I know - but I don't think soup would work all that well for your party. lol

Mmmm.....Mexican food....

Chips and salsa...maybe guacamole if you can find/make the good kind?

Or chips and queso -- Velveeta + Rotel in the crockpot = unhealthy deliciousness

Taco/fajita bar sounds like a good idea.

I make a honey, chili, lime chicken enchilada that everyone likes. It is also very easy to make. Maybe something that you can make in big batches. How many people are you expecting?

45 adults and 16 kids - i was thinking quesadillas for the kids.

So far I come up with

Apps: assorated salsas, guac, quesos w/ chips and mini empandas

Desserts: Bday cake, churros and apple nachos

Main: Mexican rice, Taco Bar,

We did a taco bar for L's third birthday. Here's what we had...

Apps: guacamole, salsa, cheese, corn and bean salsa with chips

Main taco bar:
WW wraps, white flour wraps, crunchy taco shells, salad
Ground beef taco

I think having hard and soft tacos, and then doing a few pans of enchiladas would be a good option. This post is making me so hungry for Mexican.

Oh! And once I did tortilla soup in the crockpot for a big crowd. It was a hit and cheap and easy. You might sour cream for a tipping too!
