I have a potluck lunch on Saturday at my midwife appointment. It's nifty since we will get to see the new babies that have been born and hear their birth stories.
So now, the big question: what to bring? It should be something that doesn't have to be hot--it can be refrigerated though--and should avoid things like white wheat and grains--whole wheat and brown rice are ok, though--since a lot of ladies are avoiding this (as I should be too). Last time, I brought a caprese orzo salad, and not a ton of people were able to eat it because of the pasta.
So...any ideas?
Re: Potluck recipe ideas?
Yeesh, I'm queen of the pasta salads so I would have brought one of those. Although I have a "pasta" salad that uses brown rice instead of orzo. Also a pretty good couscous salad that has gotten raves. I'm at work though, so I don't have my bookmarks.
Here's one I found online that looks close to the brown rice salad I made:

This is very similar to the couscous salad (although I added avocado and cherry tomatoes):
