meals to freeze

Ladies,

i'm new to this board, but i need your help. i'm going down to help a friend get ready for when her lo comes (any time now). Her hubby is in school so when the baby comes he'll be in class all day and doing homework at night. My friend will pretty much be by herself- specially if baby comes earlier than expected. so i was thinking i could go down and make meals and freeze them so she can just pull something out and warm it up. what are some good recipes that will freeze and keep well? thank you so much!!

 

Ps: if you can give me the exact recipe that would be great. my DH and i will be getting the groceries on our way to their house and if i have a good list then i can get most of it before we get there and maybe avoid having to go back to the store with her.

    I feel for you friend, my husband is a full time student as well.  I made many some freezer things prior to giving birth not knowing what we would be in for.  Luckily we haven't gone through all of it.  

    my 2 favs for freezer meals:  baked ziti and butternut squash lasagna.

    the ziti I just eyeball:  ziti ( boil) drain, add sauce, sausage if you want (or any other add in), cheese and bake @ 350 for 30 min.

     This makes 2 8x8's and I would half the amount of spinach (I have omitted it totally when not on hand) and I'll use Paul Newman's spicy jarred sauce instead of making theirs.  Two jars will do the job for 2.  They put together quickly as well.  If you can find frozen butternut squash it will go even faster.  If you do find it let me know as I can never seem to locate it but people tell me it exists :)

     Also, I made chocolate chip cookie dough:  spooned it onto baking sheets, froze and packaged in one dozen packs so we can pull it out and bake when wanted.

    Also made banana bread to freeze.  I just wrap in foil and then place in freezer bags.   

     Oh, enchiladas and pizza dough are other good freezer meals/additions...

    on advice from others on this board, i froze some things that were dairy free in case there was an intolerance (i guess i'm assuming she may BF) and also froze some things for breakfast/snacking.  and, almost everything could be eaten with just one hand.

    We froze enchilades, lasagna, smothered pork chops and stuffed shells. I also froze a bunch of muffins for breakfast as I knew they would be easy to eat with one hand.

     This blog has a lot of great freezer recipes.

    The Moosewoods Chilaquile Casserole looks really good. I'm definitely adding that to my recipe book.

    Some of my favorites to freezer are meatloaf. You can do mix it and then put it in those medium sized foil tins.
