NSAIFR: need tips for peeling hard boiled eggs

DH and I are having ppl over for the superbowl tomorrow and one of the things we're making is deviled eggs.  We have natural brown eggs in the house, so we'll be using those.  I can never seem to get them to peel w/o tearing off some of the egg with the shell and they look like cr*p.  We've tried: salt in the water, peeling them when cold, peeling them when still warm...

Are there any tried and true methods that actually work to get a cleanly peeled egg for deviled eggs.

  • after boiling put them right into an ice bath.  We usually fill the kitchen sink with cold water and ice.  Works well for us!

  • I usually tap one end and then gently roll the egg under my hand to crackle the shell - it loosens the membranes. I have also read that the fresher the egg, the better it will peel!

  • I usually put them in cold water as well.

  • After cooking, I empty the hot water and roll the pot in a circular motion letting the eggs crack on their own.  The shells will crack in to tiny pieces and fall off easily.

    I usually tap both ends and then take a little piece off each end before rolling. If I'm making it for us, I'll blow in one end before rolling, seems to help loosen it even more.
