So I send breakfast and lunch to daycare with DS. He will be ten months old tomorrow. I send oatmeal, yogurt, scrambled eggs, and the like for breakfast (along with a variety of fruits).
For lunch today I send some leftover risotto and a veggie mix of carrots, snap peas, green beans, and corn. I always send a vegetable and sometimes I send pasta, rice, and leftovers if I have made something healthy the night before. I have also sent toast with a thin spread of nut butter. Does anyone have any other ideas for an easy, and healthy "lunch" for a 10m old?
He is almost completely off of purees at this point (but will happily eat them) and I want to move him away from purees since they HAVE to be able to self feed when they go to the one year old room.

Quinn still pretty much eats soup every day for lunch. Most of the time I make it, sometimes I use canned. He doesn't care much for the broth... but, ideally, that should be okay if you want him to feed himself - the chunky stuff is easy to eat. Quinn can feed himself off the spoon now with a little supervision - or just put the pieces on the tray and he can eat them himself.
Quesadillas are another favorite - pretty easy... you could add some veggies (i think one of my trick-your-kids-into-eating-vegetables cookbooks says you can make veggie purees, mix the cheese in and spread it on the tortillas, so the veggie is kind of disguised) - or my mom sometimes put apple slices in our quesadillas.
I would think nutbutter on toast with some cottage cheese or something would make a good lunch.
Quinn eats a lot of string cheese too (usually for snacks but sometimes with his soup) - cut up into little rounds.
I've also made big batches of apple/carrot/zucchini muffins and pumpkin pancakes which are easy finger foods but still pack the veggie punch.
