We did some research and got the Naturpedic Organic mattress, and I wish I could tell you the compelling reasons why we chose it, but I can't remember. It fits the crib well, and is waterproof, so it's working fine for our needs!
ETA: If you don't have it yet, I highly recommend getting the book Baby Bargains. It was helpful to break down many things we were researching!
We also got the Naturepedic organic mattress and it's been great. My DD now uses it as a mattress for her toddler bed and we will use it with the next baby as well. My biggest concern was the off-gassing that comes as the result of traditional mattresses.
I also have a Naturpedic and love it. It seems so durable and although I have a pad under the sheet, I really feel like it's not needed like the mattress could just be wiped off. My only complaint is that is it REALLY heavy and makes changing sheets sort of a pain but the off gassing was a big concern of mine so it's worth it to me to have to put a liitle muscle into it. It looks to me like they have some new lightweight series so I'd probably look into that.

We just started looking into this and it appears that Costco has several organic crib mattresses, so we'll probably compare those and go with one of them (for cost reasons). I admit that I won't be researching this purchase nearly as much as I have for some other items... I'll probably choose an organic mattress at the best price and run with it.
Thanks for the input ladies, my family thinks I'm nuts for even caring about what type of crib mattress I get but it seems like one of the more important things to me considering how much time will (hopefully!) Be spent in it!
