If you've ever made cake balls/pops...

..please tell me that the first time took you by surprise with its difficulty. That they turned out misshapen and ugly and not so yummy. That it was a complete debacle that made you say, "I am NEVER making cake balls again!". But then you decided to try again, and by golly, the second time worked like a charm. They were perfect and pretty and delish. 

Please tell me that.

Because I really wanted cake balls for Camy's party but we are on a crazy small budget (ie, DH won't let me buy them) and at this point I am saying, "I am NEVER making cake balls again!".

 

Ugh.

    dude, just do cupcakes.  I agree, cakeballs to me were a PITA, but I hate hate hate hate working with chocolate.

    I've made them several times and I've found out a few things.

    1)  I don't use as much icing as recommended in most recipes.  Usually 1/2 to 2/3 of a can is more than plenty.

    2)  They have to be really stiff (as in frozen) to keep their shape during hte dipping process.

    3) If you're using candy melts to coat them, you got to work fast.  Also, I've found that it's easiest with a fairly small size cake ball (less than a quarter-size in diameter.)

  • I didn't make cake balls, but I was determined that Kate would have a fondant covered smash cake.  4th time was the charm.  Man we were sick of cake by the end.

  • A friend made them, I don't exactly get it. A cupcake isn't enough cake for me. I eat a super huge (gf) slice. A cake ball is such a tease.

    1st and 2nd attempt went in the trash. 3rd attempt was fabulous and a huge hit at the party. Cool the cake completely and put the frosting/cake mixture in the freezer between each step. Make them small, like kid bite size. I'm phone nesting but can send your more detailed tips later, if you'd like.
  • What "recipe" are you following?  I pretty much followed the Dallas Morning News instructions to a T.  Also, not too much icing like pp said.  Should be a doughy consistency.  Freeze the balls before dipping (as in for 6 hours or more).  And they're not supposed to be big, just bite-sized.

    Mine are usually misshapen too but still yummy.  

     Also - what flavor(s) did you try?

  • I thought they were too time consuming also! I'm not making them again but I have a friend who makes them all the time and I followed her recipe and instructions--not sure why they didn't do for me.

  • I made them...and they tasted awful.  Seriously.  Not even my children would eat more than one.

    I have felt no need to try again.

    I'm not a fan of them either. I find them to be much too sweet and rich.  But I've made them for a lot of people who love them and think they're a cute dessert.

    This! The first time I made them, they were way too mushy. The second time, I cut back on the icing and they were better. Still not the pretty things you see in the magazines, but better.

    I froze mine the second time around prior to dipping. Made it much easier to dip, but I still had some fall of the stick and in to the chocolate Angry

    Cupcakes are MUCH easier. I am sticking with those from now on.

  • Same exact thing happened to me about a year ago and I said I'd never do it again.  Then a few months ago I went to a fellow Nestie's party for her 2-year old and she had made some. They were AMAZING!  I asked her what she did and she did nothing different than what I did a year ago.  So I got up the courage to try again and made some for Grace's baptism last month.  They were AWESOME!!
