Canning Q: Do you have to use a rack?

I bought the Ball canning kit, but it doesn't have one of the lifters like this. Is that a must? I feel like if it was, they wouldn't sell kits without it, but then again, maybe they just want you to buy the big kit with the pot and everything. Or without the rack you can only do one at a time which would be really frustrating.

We're going to give marinara sauce and pickles a try this weekend, so I'm hoping I don't need to order a rack from amazon and pay for next day shipping.

  • You don't want them touching each other or the bottom of the pot.  I've never tried to can without any kind of rack, so I can't say that you can get away without one.  My mom didn't have one when I was canning at her house, so I used what she did have...

  • I think if you don't have the rack you run the risk of burning the contents of your jars, and also cracking the jars.  I'm suprised it didn't come with it....I'm pretty sure my Ball canning kit came with one....maybe double-check that you weren't supposed to get one, because that seems odd to me.
  • You can use extra rings in the bottom of the pan to create a makeshift rack - and I'm pretty sure I got that info off the ball canning website somewhere.

    If you just got the supplies kit with the funnel, lifter, airspace tool, and jar lifter, that's all that's in there. I was looking for just a rack, too, but  all I found was a granitewear pot that came WITH the rack in it, for $18. I was satisfied with that.

  • You don't have to have a lifter, but you do need something to keep the jars off of the bottom of the canner.  My pressure canner came with a little metal riser disc that also happens to fit in the tall stock pot we got to do water baths for quarts, so I transfer it from pan to pan depending on my method.

    This is what I do for now until I can get a better set up.  DH's granny told me to do this.

  • I've used a round cake cooling rack in my pot before. Like this. I already had it but I think they have them at the $ store.
