I have a box of barley in my cupboard that I bought for stew. it's the only thing I've used barley for. Anyone have a good recipe using barley?
It needs to be something for a picky eater (dh). Thanks!

I use it as a substitute for rice. I serve stir fries and sautes over it. An easy thing I like is my Mexican chicken. Here's the "recipe" if you can even call it that!
Can of black beans rinsed and drained, 2 cans of Rotel or equivalent amount of salsa, frozen corn, and 2 frozen chicken breasts, cumin and chili powder to taste. Dump the whole kaboodle in the crock pot, and go 3-4 hours on high or 7-8 hours on low. Shred the chicken, and then stir it back in and serve in tortillas or over rice or barley. Yum!
It was a random thing I made up when we moved looking to get rid of what was in the freezer and cupboard.
Oooooo, I like to make "Barley Pudding" (just like rice pudding but with barley instead....sooooooooyummy)
INGREDIENTS
1 cup uncooked pearl barley
3 cups water
4 cups milk, divided
1 cup Sugar
1/2 teaspoon salt
2 egg, beaten
2 tablespoons butter
1 teaspoon vanilla extract
1/4 teaspoon nutmeg
1/2 tsp cinnamon
raisins (optional)
DIRECTIONS
In a medium saucepan, bring 3 cups water to a boil. Add barley and stir. Reduce heat to low, cover and simmer for 45 minutes.
To cooked barley add 3 cups milk, sugar and salt. Cook over medium heat until boiling and then another 15-20 minutes while stirring frequently until thick and creamy.
In a small bowl combine beaten eggs and remaining 1 cup milk. Slowly add 2 large spoonfools of barley/milk mixture to milk and egg mixture to heat egg, constantly stirring. (to prevent scrambled egg effect).
Add egg/milk mixture to put. Cook 2 minutes more, stirring constantly. Remove from heat, and stir in butter, vanilla, nutmeg, and cinnamon. Serve warm sprinkled with cinnamon and raisins.
* Makes approximately six, one cup servings.
