NBR. Banana Pudding--Technical Question

I'm making banana pudding for about 20 people for tonight.  I'd like to actually make it this afternoon.  It's been quite a while since I've made it.  But if I recall correctly, it might be better to make it and let it sit for a while?  I'm making the no bake recipe---not old fashioned.  We won't eat dinner until about 8 and I'd like to go ahead and make it, but I don't want it to be too mushy.  Any advice on when I should make it and how long to let it sit in the fridge

Re: NBR. Banana Pudding--Technical Question

  • I'm not sure what recipe you are using.  I use the Paula Deen recipe (which is awesome by the way)  What I do is mix the pudding, cool whip, cream cheese, etc and let it sit in the fridge until I'm actually ready to start adding the bananas and cookies. This way, I have most of it done.

I've let mine sit (completely made) in the fridge around 3 hours before serving and it wasn't mushy.  I don't think I would let it sit for much longer though.

You are very sweet to be making that for 20 people!

  • Wow, that recipe sounds delish....cream cheese always sounds good!  I'd go with the recipe if I hadn't just gotten home from the grocery store.  I'm just doing a basic recipe I learned back when I was 12!  I'll go with what you did....around 3 hours.

Awesome doesn't even begin to describe that recipe. It is TO.DIE.FOR!!!

And I think you should definitely let it sit for a while...so yummy once those flavors blend!

  • I always make mine ahead so it DOES get mushy! I love it when the cookies soak up the pudding. YUM.

And that Paula Deen recipe is SO freaking good. Def. make it sometime. It is really rich and costs a fortune to make because she uses Pepperidge Farm Chessmen cookies and they are pricey. But totally worth it!

And PS. Thanks a lot for making me REALLY want some banana pudding!

Okay, I completely agree.  It is to die for!

Lala, I always use Nilla wafers (I'm cheap and I feel like Nilla wafers keeps it "suthun" (say it w/ a southern drawl)  in my recipe.  It's still so yummy!!
