Hippi!

I'm trying to figure out how to make lemon lactation cookies.  I'm thinking of just tweaking a regular lemon cookie recipe and adding fenugreek, maybe exchanging some of the flour for flaxmeal.

What do you think is the best method for getting the fenugreek in?  With dry herbs, fresh herbs (though I'm unlikely to find it), or oil?  Can you bake with essential oil, or does the heat render its properties null and void?

Thanks!  I know how much you appreciate a cooking challenge. Wink

Re: Hippi!

  • Add in some flax seed & nutritional yeast flakes or brewers yeast.  Do your cookies call for eggs?  If they do sub 2 tbsp flax meal/ground flax seed and 1/4 cup water for one of the eggs.  Replace some of the flour for the flour...and I'd use oat flour for at least some of the flour because the oatmeal is part of what makes lactation cookies work.

Good advice!  Thanks!  But any ideas about how to get the fenugreek in?

Honestly, I wouldn't.  I don't like the flavor and it didn't do anything for me other than make me smell like (and hate) maple for so long. Also, you would have to use a lot and it would ruin the taste IMO.

Oh, interesting.  I think the ones you can buy (yummy mummy), then, must have only the barest amount of fenugreek.

I made the recipe on your blog and brought it to my HMN playgroup, and the other moms loved them!  And I made all 4 dozen, so I've been eating them all week.  Yum!
