I made meatloaf for dinner. I made two so I could freeze one. Then I realized that I've never heard anyone talk about freezing meatloaf. Has anyone done this? What did you freeze it in? I was going to freeze it right in the loaf pan. Any suggestions?

This is a good question...I would think that drying out would be a possibility, but Stouffer's sells frozen meatloaf, so I'm sure there has to be some way to do it...

Did you cook it? I JUST made a meatloaf today and stuck it in the freezer! I didn't cook mine though, I'm just going to pull it out and cook it when I'm ready. I didn't put it in a pan, I just double wrapped it in plastic wrap and then double wrapped it in tin foil and I made it extra moist so it wouldn't dry out.
I wouldn't freeze it in the loaf pan though because you want to keep the air out of it--that's what will cause freezer burn.

I freeze turkey meatloaf all the time. It works great. I like to slice it, wrap in plastic wrap, and then freeze it into bags. It makes it easy to bring out just what I need. It also defrosts really quick. I started doing this for my son, but it works for us as well.
I also make these Texas chicken burgers and they freeze really well also.
I make double of almost everything so I can freeze it. I avoid feeding my family frozen meals this way. The only things I do not freeze are anything with dairy in it. Except for this chicken enchilada casserole which has a white sauce that doesn't break down when I defrost it.
All meat dishes, spaghetti, any other pasta dishes, chili, soups of all sorts.
