2 food questions: Dinner this week and Dinners to freeze

I need to go to the grocery store today and am looking for some ideas.

First, what should I cook for dinner this week?  Anyone having anything good?  I know some of you have weekly menus so let me know what you're cooking!

Second, I want to make some meals this weekend and freeze them for after the baby comes.  Any suggestions on meals that freeze well?  I know I'll do a lasagne and a chicken and rice casserole.  Anything else?

  • Have you ever done Dinner A Fare before?  I stocked up on DAF meals right before Gavin was born and that was awesome.  They take up less freezer space than big casseroles too.  I still ended up making a few casseroles, lasagnas, chili, and spaghetti sauce to freeze.  Then bought a DAF package.  This plus all the food that people brought us and I didn't have to cook for almost my entire maternity leave!

  • slwprincess - Yes, we have done DAF before.  That's a good idea... maybe i should check out their June menu to see if we want to do that again.  Unfortunately the one we usually go to (East Cobb) is closed now so I'll have to pick a new location!

    Spaghetti sauce is always good, or chicken soup.  I'd say chilli as well, but I could not eat chilli when I BF, the beans and spices really upset Colin's stomach.  Just something to consider.....might want to try some blander things til you know what will and won't bother the baby.

    I agree with Dinner A fare, or there is a Dream Dinners on Alpharetta Hwy that I have used before depending on whose menu I liked better for the month! If you do DAF, there is one in Vinings/Smyrna in the same shopping center as Precious Cargo- maybe a few last minute baby things?

  • My menu for this week...

    M - pulled pork sandwiches with strawberry bbq sauce, sweet potato fries

    T - turkey sausage and herb stuffed shells, roasted garlic bread, spinach salad

    W - chicken gyros, grilled veggies, greek salad

    Th - leftovers

    F - either grilled pork tenderloin  and mashed sweet potatoes or out to dinner

    S - going to McDonough to visit family, will probably eat down there

     

    As for freezable meals, I did stuffed shells, chicken casserole, then several bags of marinated chicken, dry rubbed pork tenderloin or pork chops, corn chowder, spaghetti sauce, burritos, etc.  I really liked doing the chicken because you can just thaw it out and throw it on the grill.  Plus,  people brought over so many casseroles and lasagna I was kind of tired of eating them because we don't eat that type of food too much anyway.  Seriously, I think we got like 5 lasagnas (not that I wasn't grateful, we just got tired of lasagne).

  • This is what I froze for my husband when I was pregnant:

    lasagne, shepherds pie, chili, linguini with tuna provencal sauce, shrimp scampi with fettucini, Halibut with carrots, parsnips and celery, Italian Sausage Soup, Chicken and Pacetta Pasta, Beef Stew

    I also froze in individual portions and made a spreadsheet for the fridge door where my husband could mark off what he had used already and see what was left.?

    I also included what he would need to either pick up from the store or prepare to go with it on the side. ? Like the Italian sausage soup goes well with crusty bread. ?And reheating instructions, what needed to be defrosted in advance, etc.?

  • About the East Cobb location... they are going to be taken over by corporate and will be doing a delivery only service (like what West Cobb already does.)
