and lets see Monday we had...oh yeah Pizagne - a Rachel Ray recipe that is a combination of pizza and lasagne mmm with Caesar Salad.
Ugh, I hate cooking too, and DH and I are on Weight Watchers so it makes it doubly hard. But, I looked on their website today and got a recipe. I made Chicken Cordon Bleu, it's still in the oven, don't know how it came out. Here's the recipe if your interested:
4 spray(s) cooking spray, or enough to coat chicken 1 pound(s) uncooked boneless, skinless chicken breast, four 4-oz pieces 3 oz Boar's Head Smoked Ham, or other brand, four 3/4 oz slices 3 oz low-fat Swiss cheese, four 3/4-oz slices 1/4 cup(s) all-purpose flour 1/4 cup(s) honey mustard 1/2 cup(s) seasoned bread crumbs, Italian-style
Instructions Preheat oven to 400?F. Coat a baking sheet with olive oil cooking spray.
Place chicken breasts between two pieces of plastic wrap and pound to 1/4-inch thickness; remove plastic wrap. Arrange 1 slice of ham and 1 slice of cheese on each chicken breast.
Starting from shorter end of chicken, roll up breast into a tight pinwheel. Tuck in ends. Secure with toothpicks.
Place flour, honey mustard and bread crumbs in 3 separate shallow bowls. Add chicken to flour; turn to coat. Transfer chicken to honey mustard; turn to coat. Place chicken in bread crumbs; turn to coat.
Transfer chicken to prepared baking sheet and coat with cooking spray. Bake until chicken is golden brown and cooked through, about 40 minutes. Remove toothpicks and serve

Use four boneless chicken breasts and your favorite salsa.
In a 9x13 pan, cover the chicken breasts with the salsa. Cover with foil, bake at 350 degrees for 25 minutes.
Layer on cheddar and mozzarella or Monterey jack cheese. Bake for 5-10 minutes or until cheese is melted.
Serve with white rice and tortilla chips.
yumm, now who wants to make one of the dishes and bring it over to my house?
LOL. It's not so bad. You just have to find things with simple ingredients. hippy has some good ones in her blog. the chicken wrapped in bacon is delicious. https://rumbleinthekitchen.blogspot.com/
I'm not making anything, but DH is making a roast beef, with acorn squash, mashed potatoes and scratch made crossiants. He also made goat cheese and carmalized onion won tons as an appetizer.

Jealous....that your DH cooks. DH can barely throw in a frozen pizza! LOL If he ever unloads the dishwasher (which is never) he leaves some stuff on the counter because he has no idea where it goes. Sad. yes. I know.
DH is in charge tonight. He had to work late, and I was too lazy to go to the store.. so he's stopping on the way home... it'll probably be some sort of pasta and cheesy bread..

I hate to cook too - that is why we use the crock pot a lot in my house.
Oh and another idea - lately I have been buying whole fryer chickens and some of those roasting bags that have the seasonings included and making those. I put some veggies in the bag and bake them for 1 and 1/2 hours and they turn out delicious! I have been getting the chickens on sale for 67 cents a pound at Fresh n Easy so it is a really economical dinner too!

Tilapia filets pan fried (egg, then dipped in a flour/chili powder/seasoned salt/chipotle mix...) w/ broccoli and couscous on the side.

Sour Cream Chicken Enchiladas ( I don't know where I got the recipe - could have been a nestie, I don't remember!)
1 can cream of chicken soup
1/2 c sour cream
1 lb chicken
1/2 c chopped onion
4 oz can diced green chiles
1 1/2 c shredded cheese
tortillas (the recipe i had said 12, but i only used 8)
Cook chicken with onions. Mix sour cream, soup. chiles, and 1 c of the cheese in a bowl. Take about 1/2 c out to top it with. Add chicken to mix.
Put the mixture (w/chicken) in tortillas, top with remaining mixture, and then remaining shredded cheese. Cook at 350 for 20-25 minutes.
I also added some Picante sauce on top.

And, for the record, I made cheesy turkey meatloaf, red potatoes w/garlic butter, and breaded garlic green beans. Yummy!
