Anyone have any go-to vegetarian recipes that are not too labor-intensive? I'm getting bored with my current rotation, and I need to shake it up a bit. Also, I'm not a huge fan of tofu, so if you can recommend anything sans tofu, I would greatly appreciate it!

Always good to do a recipe swap! These are 2 that I made up myself, and we have regularly. They are good too because you can put a lot of veges in them, both high in protein, and super tasty, make great left overs for lunch!
Vegan Stew
1 onion, 1 clove of garlic, 2 celery sticks, 2 grated carrots, 2 grated zuchinis, just any other veges you have on hand, diced and saut?ed. Add 1 bottle of beer, 1 tin of mixed beans, 1 tin of brown lentils, tomato paste, then seasonings of your choice. I usually use onion powder, garlic powder, italian herbs etc. I add 2-3 tablespoons of hoisin sauce, or smoked garlic sauce, or BBQ sauce, something nice and rich and tasty. Simmer slow for an hour. Great with vege and mashed potato, the beer and hoisin sauce make it sweet and rich. Thats a good winter one.
"Fish" cakes
I know you said you don't like tofu, but I never tell people there is tofu in these and you would never know. 1 very large potato, peel, boiled, mashed. 1 block of firm tofu, mashed. Mix them together, that is your base. You could add bread crumbs or an egg if you feel like the consistency is off. Now for the fun part. I usually make mine thai "fish" cakes. I add some chopped garlic, chilli, coriander, lemongrass, ginger, sweet chilli sauce, dried thai seasoning, or a squirt of fresh thai herb mix, soy sauce, make them really really flavourful. Shape into balls, brush with oil, and bake till firm, maybe 30 mins? I have also made Mediterranean ones with olives, sundried tomato, italian herbs, tomato paste etc etc, pretty much flavor them however you like!
