I attempted to give my LO (almost 8 months) puffs the other day, and he acted like he was choking on them. This was my fear beforehand, even thought I know they disintegrate. Is this just him getting used to the texture? I'm so worried that he might actually choke on these and it gives me anxiety thinking about offering them to him again!

This. Gagging and choking are not the same thing. Gagging is totally normal as they learn to maneuver foods with more texture. Their little throats aren't used to anything but liquids and purees, so it takes some time to adjust.
I am also scared to death to offer solids that aren't purees. We first offered Puffs when LO was almost 6 months old. I would bite them in half, and only give him half. He got the hang of it, but did make the gagging noise a little bit at first.
Remember that gagging =/= choking
It's so hard to not freak out though!
Now he loves to eat Cheerios, too! We haven't really tried anything else solid except for some pieces of pear
