So I'm trying to lose this d@mn baby weight that is hanging on and in addition to hitting the gym, I want to cook healthier meals. What are some of your go-to healthy (preferably easy!) recipes or websites for healthy meal ideas?
We eat curried lentils over brown rice and one of DH's favorites is Quinoa and black beans-he is on a no meat kick lately. We have had beans or lentils 4 times in the last week and that is about enough for me. Last night I made pork loin wrapped in bacon to make up for it.
Veggie chili. I just use whatever veggies we have in the house (usually squash, zucchini, carrots, celery, mushrooms, kale and spinach, tomato, cucumber) and half a 15 oz can of red kidney beans, black eye peas, chili beans, low sodium black beans, and white beans I can't remember but they have no sugar. Throw in some tomato paste and water and some seasonings and cook until the veggies are smushy and throw on some cheese.
I also make this buffalo chicken dip
2 cups of chopped chicken (I use canned)
2 cups Greek yogurt
1 pack of ranch dressing mix (3 Tbs)
3 Tbs hot sauce
3 Tbs green onion
1 tsp salt
1 tsp garlic powder
3/4 tsp pepper
Diced tomatoes and green onion for garnish (optional)

I don't put the ranch dip, green onion, or salt in it. I use chicken breast, whatevers on sale and Franks red hot and dip veggie sticks in it.

I make these with whatever veggies I have and freeze them then reheat them in the morning. Lo loves them too.

For desserts I try to follow South Beach diet because they are low sugar.
