vegetarian dinners

we eat a lot of mexican and pasta (gluten free pasta) 

any ideas???

i make mexican caseroles, burritos, stuffed peppers, pasta casserole. 

we love quinoa too 

just looking to branch out! same old dinner all the time!

We're not vegetarian, but we do a fair amount of vegetarian meals. And quinoa is a staple in my house!  We just had quinoa casserole for dinner last night.  It was probably really similar to your Mexican casserole, but mine included chicken.<

My lasagna is meat free, and is a huge hit.

In our house we make a LOT of tofu! I love making it with a breaded top, so yummy!
