What tasty meals have you made lately?

Since restarting WW again, I have been home cooking more. Yesterday while snowed in I made polenta with sundried tomatoes and eggs for breakfast and spaghetti squash with tomato sauce for dinner. Yum!

  • That sounds delicious!  I always want to make polenta, but DH hates it, so we never have it.  I have been cooking a ton from scratch lately.  I had to go on a dairy free diet for DS and it has really motivated me to cook more. I thought I ate a decent diet because we stay away from fast food and highly processed stuff, but, once I started reading labels religiously, I was pretty shocked by all the crap that is in the food I had been eating .

    I've gotten into baking my own bread and rolls.  It's not as hard as I thought it would be and I love it!  I've been making a lot of Mexican food lately because that's my favorite.  Homemade tortillas are to die for!  I made homemade falafels recently and they came out terrific.  DH couldn't even stop eating them and he's usually not into meatless meals.  Last night, I didn't feel like having a big dinner, so I made roasted red peppers and had them on top of garlic bread that I made with my homemade bread.  DH added sausage to his (of course, lol).  It was so yummy.  Today I think I'm going to make some homemade soft pretzels and DH wants to try making pasta from scratch.  We're going to have it with turkey picatta.

    ETA: Sorry if that sounds like Carb Fest 2013!  I swear we eat vegetables, too, lol.

    I make both flour and corn tortillas.  The flour ones are really versatile and I basically only make the corn ones for enchiladas but I love them both.  The flour tortillas reheat well when you steam them so I usually make enough for the next night, too.  The corn tortillas don't reheat great, but I give the leftover ones new life by shallow frying them to make them crispy for tostadas.  I linked the recipes below.

    What kind of bread? Do you use a bread maker? I've been looking for a good bread recipe that does not need a bread maker.

    What kind of bread? Do you use a bread maker? I've been looking for a good bread recipe that does not need a bread maker. 

    This is my favorite recipe for bread so far.  It doesn't require traditional kneading, although I do like to reach into the bowl and stretch and fold the dough by hand a few times while it's rising.  It produces a better texture than just leaving it alone, but even if you leave it alone, it still comes out quite nice.  I usually start the dough the night before and then bake it in the late morning/early afternoon.  It's ridiculously easy and it makes amazing bread!

  • I made this bread yesterday and am making it again today...AMAZING!

     

    So easy and delicious, I made one loaf of pecan, cranberry orange and today am making garlic, rosemary and cheese.

     

    My only fear is that I will not lose any more weight now :-P
