NBR- Pancakes

Does anyone have a good recipe for blueberry banana pancakes?

  • Since I'm lazy, I usually start with pancake mix (instead of making pancake batter from scratch). Then I add a little cinnamon, a little nutmeg, vanilla extract. Then I mash up the banana thoroughly and mix that in. After the batter is on the griddle, I add the blueberries then. Some people prefer to mix the blueberries in with the rest of the batter though. I don't have exact measurements, sorry.

    Thanks! I planned on using pancake mix! I just wasn't sure how to use the bananas. I found a lot of recipes online. Some said to mash them and others said to slice them.

    It's really up to you. I like to mash them up to make the banana flavor most consistent (plus it helps keep it moist!). My husband prefers to slice the banana into the pancakes.

    It also works well for banana blueberry oatmeal. I make mine with lowfat milk instead of water, mash the banana, cook the banana with the oatmeal and just stir in the fresh blueberries right before eating.

  • Yum! I've been loving blueberry foods since pregnant and on Saturday really wanted banana stuffed pancakes too. Perfect post! I'm making these ASAP!

    I use this recipe. It is kind of bland but I add cinnamon and vanilla but it is the perfect base for any kind you would like to add!
