this is the first year that i will not be with the rest of my family for christmas- so usually i dont cook, but this year its just me dh and lo... i didnt even think of christmas dinner until tonight! yikes! what are you guys having? anyone have any awesome recipes they want to share? the only thing i know so far is i will probably make a chocolate pie haha. any good snack ideas too?

This year my MIL is teaching me how to cook my DH's favorite food (well it's also his parent's and brother's fav too). Sour cow tongue. It will be interesting to say the least. She makes it like once a year, usually on Thanksgiving or Christmas. He's wanted me to learn how to make it forever so this year I told her I would buy them if she taught me how. Everytime we've had it I at least take a few bites. There will also be ham and all the normal sides.
As for snacks we like ham rolls. Sliced ham with cream cheese in the middle. Veggie/olive and cheese tray, etc.

Christmas Eve my mom is cooking...we usually have ham, green beans, mashed potatoes, shells and cheese (because the kids love it). I'm making red velvet cake, which I make each year, but doing something different this year. I'm making 2 rounds and breaking it into pieces and then layering it in a trifle dish. Layer of cake topped with whip cream mixed with white chocolate pudding mix, then sprinkle with chocolate chips, repeat x2.
Christmas morning I will have breakfast casseroles in the fridge that I'll put in the oven while we are opening presents. French toast casserole and a sausage casserole.
Christmas night MIL is cooking beef tenderloin, baby spinach salad, steamed carrots. Not sure about dessert.
would you mind sharing your sausage casserole recipe? i have a french toast one but my lo loves sausage and would like to do this as well!
I just googled it. It's the standard hashbrown casserole with sour cream, mushroom soup, cheddar cheese, and a corn flake and butter crust on top.
I need a French toast casserole recipe!

This year I will be making Pioneer Woman's pot roast and creamy mashed potatoes. My mom will also be making it and my sisters will be helping out with sides and apps.
Oh and for Christmas morning, I am following my husband's Christmas tradition by making Danish pancakes called Ebelschivers.
