MSPI ? RE: Birthday Cake

So I feel slightly embarassed to ask this but, my DD1 is turning 3 in a few weeks and I want to make her a birthday cake. I was going to order one, but I love cake and can't have it since DD2 is mspi. I am afraid if I order one through the bakery it will contain milk/soy so I thought maybe I could make one so I could have some Embarrassed.

Does anyone know of any brand name cake/frosting that is mspi friendly. I am open to try making it from scratch, but ideally would just like to use a box b/c I am afraid if I make it, it won't turn out as good. Ideas?

  • I don't know about MSPI safe, I know that several Duncan Hines brand cakes and icings are dairy-free, but I believe they have soy.  I'd look online and find a recipe - either one that is already safe or one that you can adapt by using substitutions.

  • I bought a yellow cake mix at Whole Foods that was dairy/soy free and used almond milk instead of regular milk. For the icing, I used Earth Balance soy free fake butter. It doesn't come in sticks (so annoying), so I just softened some out of the tub. Then I added approx 4 cups powdered sugar, a few capfulls of vanilla, cocoa powder to taste, and a splash of almond milk for the icing. The cake was eh, but the icing was awesome!!

    I think you're referring to Cherrybrook Kitchen.  LOVE their cakes.  I used to get samples of the mix from my job, and would make them even before LO was around.  They also have frosting mixes that you can make with the almond/rice/oat (whichever you prefer) milk.  I made the yellow cake w/ their chocolate frosting the other day and even daddy loved it!
