I used an Ergo carrier with my son until he was 3 yrs old. I have actually seen someone use two Ergos with twins: one on front and one on the back! So we got two so that I could wear one and my husband could too OR if I was really feeling ambitions I could wear them both at once! Ergo carriers work best for older babies (not newborns so much) so we both also got baby K'tans. They are super easy to put on and they don't require as much skill and help to put on as the Moby.

Ditto this combo. I used a Baby K'tan some when DDs were little (I had a Moby but couldn't deal with the learning curve) and DH just had a basic sling or two. I really, really love my Ergo! I still use it some and it is a godsend with twins. I have often put one on my back in the Ergo and then used a single umbrella stroller or put the other one in a single shopping cart. It's probably my favorite thing ever.
In terms of numbers of carriers, I'd start out with one and see how it goes and if you (and the babies) like it. I've used my Ergo a good bit because I'm often out with DDs by myself, but if DH is with us, I don't tend to use it--we usually go with two umbrella strollers or a double, or two shopping carts, or some other combo. We really haven't had many situations where DH would wear a girl.

We had a fleece sling that a friend made us (never felt like the baby was in it quite right), a Moby and an Ergo. LOVED the Ergo! The Moby was OK but I didn't love it. I think it has a bigger learning curve than some and I often felt like it wasn't *quite* right. Which is a bigger pain when you have to potentially deal with the first baby falling asleep once you tie it and then the second one wakes up crying and you have an awkward transfer to deal with ...
ETA: Also from what I've heard from others, if we have another baby I want a Baby K'Tan for the newborn phase and then use the Ergo when they're 3-4 months and up.
I've gone through a few carriers myself. We have 3.
The baby bjorn (air): This is such a lightweight easy carrier to wear. It's great for getting the baby in and out easily, and for quick walks, or to run an errand. The problem is you can't wear the baby for a long time, because it'll start to hurt your back. DH loved his baby bjorn and still wears it. He has never said it hurt his back and he found it the most comfortable. It's also better for small babies (newborn-3m).
Moby: It's really good for newborn babies to snuggle up close to you, but it's a bit of a pain to wrap it around. I think because it was just fabric that was tied in place, I was always worried that eventually it would come loose and the baby would fall out. But it doesn't. It's really comfortable and good. Just a pain to put on. but once you memorize all the steps involved, it's easy as cake. You can also wear both of them as newborns (but I never tried, because it seemed like it would squish them too much). I almost never used it, BUT I use it now everday. My twins are 8m and 20lbs+ each. I adapted one of the hip holds to carry both of them on each hip, so I can go up and down the stairs. It's awesome!
Boba Carrier: It's like the moby (but I think better). Very comfy to wear the baby for long mall trips (walks). Though it's really only meant for babies 4-5months and up. Their also $100. I only wear this when one of my twins wants to be held and not sit in the stroller when we're at the mall, or outside.

I have a Moby, a Beco Gemini and a Baby Bjorn (hand-me-down.)
I loved my moby when they were little but haven't used it recently. But I plan on trying it out again soon.
The baby bjorn is okay. It's easy to use and has been nice to have as an extra but I wouldn't want to use it all the time.
I LOVE my Beco Gemini and use it daily. It's easy to use, does a variety of carries and is great at any age baby. It's super comfortable.
The attachment parenting board has lots of information on carriers if you head over there and search through the posts.
