Here is the corn chowder recipe. I did post it on the WFD post but in case you forget to go back
3 Cups frozen or fresh corn (couldn?t find fresh yesterday but it would be around 6 ears I think)
? lb bacon or more
1 medium onion-chopped
2 jalapenos-minced(we like spicy-next time I?d double this)
1 cup chopped carrot
4 cloves garlic minced
8oz. sharp white cheddar-shredded
4 cups low sodium chicken stock
1 pint ? n ?
1 stick of butter
? cup flour
Potatoes-diced-whatever works
In a dutch oven or large pot or pan cook bacon. Drain and set aside. Cook the onion, pepper, carrot, corn and garlic in the bacon grease until soft. Remove and set aside. Melt the butter over medium heat and slowly stir in the flour to make a roux. Cook the roux stirring constantly until it smells kind of nutty maybe 3-4 minutes. Add the veggies to the roux and stir in the chicken stock. If you used fresh put a couple of the corn cobs in. Add a pound or two or potatoes and cover and cook until tender. Take the cobs out. Stir in the ? n ? and the cheese. Salt, black and white pepper to taste. Top with crumbled bacon.
**** I just use frozen corn****

Ah, thank you!
I know what we're having for dinner tomorrow night!!
Do you make something else to go along with it? Or is the soup filling enough?
