RP: Help Chocolate Chip Cookie problem!

Ok, I've made cc cookies a million times.  And the last time that I made them they are extremely flat and air-holey.  I figured that I must have put in baking soda twice. 

I made them again tonight and they are even flatter than they were before-like paper thin- and have such big air holes in them that you can see the cookie sheet through them!  

I have no idea what is going on with them.  Can you suggest something?  Do you think my baking soda is bad? It doesn't expire until 5/11 sooo..... 

If I added baking powder, would it help?

  • I'm pretty sure baking soda *should* be replaced 30 days after opening. Flat cookies seems like a problem with the butter or oil, though. Is the butter getting too soft?
  • Different type of butter? When we do recipe trials we sometimes use different brands and that is what happens if you use a butter that isn't a high enough percent oil. I don't know if it isn't that. Baking soda CAN go bad though.

    Baking soda is not stable on the shelf- I replace mine every month or so.

  • I made some today too. If the recipe calls for 1tsp of soda I usually do about a half of that. I also don't add salt. I use salted butter so I leave out additional salt.

  • You might want to try chilling the dough also.  Chilled dough sometimes bakes better.  I don't remember where I heard that, but it was someone on Food network.  I had cookies like you described and the chilling helped.  I never knew b. soda 'expires' so to speak.  Learn something new every day...right, lol!
