Has anyone made one? Want to share your recipe? There are so many out there that I'd rather use one that I know will be good 
We're going to visit MIL on Christmas Eve and won't be back till late-ish at night, but I want to make this for Christmas morning, so the easier the better!

Well, it's not a casserole, but since nobody has responded... I have made pancakes in the crockpot before. It turned out like a pancake "cake." I liked it.
