Trouble TTC

Update from yesterday PIP (horrible person)

Ladies, thank you so much for always being so understanding and compassionate, it took me a little bit of time to calm down, but your words of encouragement and support were extremely helpful and I doubt it would have gone as smoothly as it did without you and this board.  So a million times thank you!

To "treat" myself I left work early, just to get out of there and be on my own.  Once I had a chance to take a few deep breaths and relax I made these (picture below) for the charity my DH asked me about.  He came home early from work, gave me a hug, a pack of Reese's peanut butter cups and helped me layer the cake, it was a nice way to end the evening, and we made one extra for ourselves to enjoy.

Thanks again for everything!

  • So cute!  I wanted to do something similar for the little girl next door's birthday.  Did you use gel colors?  I keep having consistency issues with dyed cakes, they come out dense.

Good for you for taking some time for yourself, then doing such a wonderful thing for others.  Go you!

  • I'm glad that you were able to find some time for yourself and that DH was so supportive. That cake is adorable!! If you don't mind sharing, I would love to hear how to do that. I have an 8 year old niece who loves baking and she would be thrilled to make something like that.

  • I followed this recipe:

My personal tips would be to watch the time, it took longer then she said because I think she was cooking at a high altitude, and even though the top looked down the bottom wasn't.  I did notice that as the cake cooled it pulled away from the jar, but I don't know how to resolve that issue.  It tasted AMAZING! LOL

    Rainbow Cake in Jar

    • 1 box white cake mix made according to package instructions
    • Neon food coloring in pink, yellow, green, turquoise, and purple
    • 3 one-pint canning jars
    • 1 can vanilla frosting
    • Rainbow sprinkles

Preheat oven to 350 degrees. Thoroughly wash and dry the inside of each canning jar. Spray the inside of each jar thoroughly with nonstick cooking spray. Set aside.

Scoop about 1/2 cups of cake batter into five small bowls. It doesn?t have to be perfect, don?t panic if you get a little more of less of one color than another.  Tint each bowl of cake batter with the food coloring until very vibrant.

Spoon about 3 tablespoons of the purple batter into the bottom of each jar.  Spoon equal amounts of turquoise batter, then green, yellow, and pink.  Place the jars in a shallow baking dish, add about 1/4? in water in the baking dish. Place the baking dish in the oven and bake for 30-35 minutes.

Remove jars and allow to cool completely before scooping a small portion from the top of your cake and adding a hefty dollop of vanilla buttercream to the top. Sprinkle & serve, or cover with a lid and store in the fridge or pop into the mail & surprise someone you love!

  • That looks absolutely amazing.  I'm definitely going to try this.  Who wouldn't be cheered up a little by the cuteness and the vibrant colors?  Smile

How many did you have to make for the charity event?  Did you have to double/triple the recipe?  Or was the one recipe enough?

    Me: 32, DH: 45... TTC #1 since May 2010
July - Nov 2011: Testing with OB... OB said everything looks good
March - Sept 2012: Moved to RE.. 4 treatment cycles - responses of one or no follicles
09.03.12: Diagnosed Poor Ovarian Response.. DE IVF only option
Feb - Nov 2012: Pursued Adoption. That door slammed shut.
    12.23.12: Surprise BFP (first ever)... 12.25 - 12.31: Natural M/C

How many did you have to make for the charity event?  They didn't give us a set amount, so I made one box cake worth, which turned out to be 6 jelly jars (7 if you count the one we ate).  Did you have to double/triple the recipe?  Or was the one recipe enough?  I think next time I do this for a charity or party I'll double the recipe and make more.  I used smaller jars then she suggested and the one we saved for ourselves was plenty for one person, kind of like a slice of cake each, plus a cute jar to keep. :)
