I would go with a traditional name for the mn. I would probably stay away from names that start with "M" like Michael and names that end in -en/-an/-on like Stephen. Other than that I think it's wide open. I like pp's idea of Thomas.
Love the name Callum... I asked DH yesterday about 10 times what he thought of it and got no response! I like the middle name Charles with it. Because even though they both start with C's... they don't start with the same sound.

Thomas, Michael, James, Andrew... I always like traditional middle names if there is a "different" first name.
Don't listen to the haters. Callum is on our list, too. It is DH's fav.

I think Callum Thomas sounds nice. You can't go wrong with any traditional name, really.
