tell me your best (easy) recipe for a re-heatable dinner

A friend recently had #2 and we're all pitching in to bring her dinner.  No food restrictions that I know of.  Any ideas for an easy, re-heatable dinner?  I say easy because I am not the greatest cook.  Thanks in advance :)

  • I loved shepherd's pie when I was recovering from childbirth.

    To make it easy, use instant mashed-potatoes, a can of mixed veggies, already cooked chicken strips, and a can of chicken gravy! 

    Cut chicken strips into bite-sized pieces. In a large pot mix veggies, chicken, and gravy til heated through. 

    In another pot, make mashed potatoes according to boxed directions. 

    In a pie pan, pour veggies, chicken, and gravy mix. Pour mashed potatoes over top. Smooth with spoon or make track lines with fork. Bake at 350* until potatoes are crisp and lightly browned on the top. (about 5-10 min). Let cool 5 min. Wrap with tin foil and take to friend! 

    If this is too much, you could always order something or take a meal from your local deli.

  • Related topic... have you seend FoodTidings.com?   It's a very cool website where you and all of your friends can schedule food deliveries for someone.   We use it all the time for our playgroup since it's a bunch of people and someone's always having a baby!   Love it!

    I usually make grilled drumsticks and homemade baked beans.  Kids love drummies and they're easy to grill.  My bean recipe takes ALL DAY, but they're so good!  It's from America's Test Kitchen.

  • Saucy Apricot Chicken

    Soo easy. I use chicken tenders instead of full breasts. Add rice, a salad from your grocer's salad bar (or bagged salad) and fresh rolls and there you go!

  • Lasagna, Mac n Cheese, Shepherd's Pie.
  • Gumbo (buy veggies all cut up in frozen aisle).

     Grilled veggies make a great side and are better re-heated than when first served. (Chop up any veggies you like hot - broccolli, cauliflower, zuccini, eggplant, carrots,onion etc., coat with oil and desired seasoning-we made it with salt, italian mix and garlic, put in roasting pan in 350 oven for one hour-try to stir after 30 minutes)

  • Chicken Curry Casserol

    • Cooked white riice to cover the bottom of a 9x12 glass baking pan
    • 1 or mor lbs of steamed brocolli
    • 2 cans cooked chicken or 2 to 3 lbs cooked chicken cubbed
    • 2 cams cream of chicken soup
    • 1 16 oz container of sourcream, your choice
    • shredded cheddar cheese
    • salt, pepper, and curry powder to taste

    cover the bottom of a pan with rice, layer with steamed brocolli and chicken. Mix cream of chicken soup, sourcream and salt, pepper, and curry. pour and spread mixture over cassarole. Cover with shredded cheddar. Bake at 350 until hot, 30 to 40 minutes
