Just curious what resources you use in terms of recipes and cooking, or if you just fiddle around a lot and improvise?
DH is a cook and he has taken it upon himself to modify as many recipes as possible to be Top-8 free. He's made cream soups, chicken marsala, risotto, and so many other things for me. I love it!
As for recipes, my go-to cookbook is Sophie-Safe Cooking (I can do oats--a lot of the recipes are oat-based). I love it because the ingredients can all be found in my pantry without having to go out of my way to a specialty store to get random things. I also have several Cybele Pascal cookbooks.

your DH sounds awesome!!!! as soon as i took away all products that contain my sons allergies from the house -his cooking times were done.

Well, for one thing, Vance's Dari-Free is a staple in our cupboards. In anything calling for milk or cream, we use it as a substitute. If the cream in the recipe is to make the recipe creamy (like in thickness) then we add some cornstarch to thicken whatever we're cooking. I use Enjoy Life's Crunchy Rice for anything that needs to be breaded--I toss it in my food processor with some seasonings (like onion powder, Italian seasoning, etc.). It really makes a great breading for chicken and pork!
Being Top-8 free is hard, and it takes time figuring it all out, but what sucks is I am also raw fruit and veggie-free (so no salads, biting into an apple, etc. due to severe oral allergy syndrome) .
Also, for $25/mo you can become a member of kidswithfoodallergies.org and they have a recipe database of lots of Top-8 free and allergy-free recipes. The only thing is that I find (again) that a lot of the recipes call for things I don't usually stock in my pantry.
DS is. But he only has one safe food and we are trialing pears right now. So he is pretty much everything free.
