We do pasta primavera, turkey-veggie meatloaf, oven baked chicken with vegetables, and stews in the crock pot. That's about all I've got so far for meals we can all share.
When I don't have a meal prepared, I usually just give him salmon, tofu or roasted chicken with broccoli/carrots and some kind of potato. All stuff I usually have on hand or in the freezer ready to be chopped up...
Any kind of pasta bake is always a hit - I often do it with some kind of meat, some spinach and/or grated zucchini, sometimes mushrooms and sometimes tomatoes - it's enough for 2 meals, and it's fairly easy to make.
Let's see...we make burrito pie sometimes because Ben loves Mexican food but obviously regular burritos are a bit much for the boys to handle at the moment lol!
Sometimes we make rissoles with some sides (they're REALLY into broccoli so we eat that a lot), or chicken (we shred their portions) with sides.
Basically, I just don't make anything too sloppy (e.g., soup) - as long as they can pick it up, they can eat pretty much anything in one form or another as long as it's chopped up a bit.
Lisa, those rissoles look similar to my turkey veggie meatloaf. Yum! A also really enjoys broccoli. It's our go-to, quick-cook veggie.
And thanks, Lori. I guess it's time for some more vibrant flavors -- haven't given him chili yet, although we eat that fairly often. A lot of your suggestions involve dairy and now that he seems to be taking well to the cow's milk, perhaps we can try them. Maybe "bare burrito" first...
Mapo tofu is the EASIEST thing to make (just buy those premade mixes-- make sure it's mild). I make it with chicken and add furikake and water chestnuts That way there's chicken and tofu and rice!
You could also buy lau lau from Tanioka's (or wherever) and steam it, then have lau lau, rice and poi (or lomi salmon if you want to be fancy)

She mainly eats whatever we eat...
Her favorites lately have been:
- Chili (three beans with ground turkey...we go mild with the spices and just do lots of cumin and chili powder and not a lot of red pepper)
- Cottage cheese with sliced strawberries
- Turkey Meatballs with sweet potato oven fries and grilled zucchini spears. We let her dip into BBQ sauce and she LOVES it!
- Pasta Alfredo with grilled chicken and steamed broccoli (we used brown rice pasta)
- Chicken Noodle Soup (sans broth) with Grilled Cheese Sandwich or Quesadilla
- Sauteed mushrooms, steamed asparagus with baked tilapia
- Tuna casserole - Tuna, cheese, pasta or rice with peas, carrots, green beans and corn kernals mixed in
- "bare" burrito - black beans, cheese, diced tomatoes and avocado, corn kernals in a bowl
- Pancakes
- Omlettes (eggs, cheese, veggies) with toast
Her favorite snack right now is Annies Bunnies Graham Crackers (like Teddy Grams but organic/all natural)
She's also really into fresh strawberries right now and asks for them all day long!
Here she is loving a 15-bean and beef chili I made last week!
