We have ours on Saturday afternoons because of family needing to travel, and because it gives me all morning to prepare, where as we are in church Sunday morning.

We do Saturdays. I typically take Friday off to get ready and DS is in DC so I can do my errands. I like Sunday to get my house back together and organized before going back to work.
For us Saturday is a first choice, and Sunday is second choice. Any weekday is too hard with people working. DH works second shift so weekdays aren't even an option for us. Sundays I try to avoid because of church and people having to work the next day. We have some family from out of town and they prefer to travel home on Sundays.
I work a 10hr shift on fridays and don't get home till 6pm. So I like to have Saturday to do my last-minute planning for the party. We don't have many people coming from out of town so we don't really have to plan around that. If we did then we'd probably do Saturdays. Last year DD's party was a later sunday afternoon- starting at 2. It gave us time to go to church, come home and have lunch but yet decorate the park pavillion before it started. So it was late enough for the one couple who was coming out of town (2hrdrive). And the out of town bday party we attended (from the same couple!) did theirs at 2pm on a sunday as well. I thought it worked nice.
However I can see us moving bday parties to Saturdays as our situation changes. Good luck planning!
